Celebrate Cinco De Mayo in Style:

Cinco de Mayo is around the corner. And any reason to create a themed meal prep, I am all about it. And whether you are celebrating at home with family, entertaining with friends, or just enjoying a solo dinner. I hope this list of my favorite items help you plan our your menu for Cinco De Mayo.

The recipes:

All of these recipes are super easy, with the option of meal prepping ahead of time. And if you want to save yourself some time for your busy week. I suggest meal prepping Instant pot tomatillo chicken, Instant pot carnitas, or the meatless taco meat. Because with these items being prepped ahead of time. During the week you can use to create a variety of meals.

Cheesy gordita crunch tacos:

Now let’s be honest, who doesn’t love a good taco? And if there are any Taco Bell lovers out there, these homemade cheesy Gordita crunch tacos are sure to be a crowd pleaser. And if you are entertaining, these are perfect for creating a build your own taco bar.

Air fried chicken taquitos:

You’ll be asking yourself, why haven’t I made these air fried chicken taquitos sooner?  After trying these crispy and easy air fried chicken taquitos. They taste just as good, if not better, than any restaurant style chicken taquitos.

Instant pot carnitas:

And if you are looking for a simple item to meal prep on Sunday, try these Instant pot carnitas. They are perfect for using up in a variety of meals for the week. Think in salads, tacos, loaded quesadillas, or nachos.

Mexican fruit salad:

Growing up this Mexican fruit salad was a staple. And what I love about this salad is that it can be prepped ahead. So you have it ready to go for snacking on throughout the week. And feel free to use whatever type of fruit you have on hand. But my favorite combination is: jicama, Persian cucumbers, watermelon, oranges, pineapple, lemon juice, and Tajin.

Quesadillas:

And quesadillas are always a good idea for the busy weeknights. The possibilities are endless with what you can fill your quesadillas with. I like using my Instant pot tomatillo chicken and cheese in mine. And if you want to make your own homemade tomatillo salsa, get it here.

Air fried cinnamon sugar chips aka buñuelos:

Growing up, one of my favorite snacks my Nani (grandma) would make for us was buñuelos. And if you have no idea what those are. They are basically a fried tortilla dipped in cinnamon sugar. And since you all know I am all about recreating my favorites with my own spin. I wanted to create a version in my air fryer. And these air fried cinnamon sugar chips are a must.

Meatless taco meat:

For my vegetarian friends, this meatless taco meat is for you. And even if you aren’t a vegetarian you will not miss the meat when enjoying this meatless taco meat. And this is a great option for meal prepping on Sunday. Then throughout the week you can repurpose into a variety of meal. Think in salads, loaded nachos, tacos, or in quesadillas. And don’t forgot to prep some dairy free “queso” to go with it.

Baked fajitas:

Here is another great meal prep option, baked fajitas. Because you can mix and match the leftovers, so that you won’t get bored with leftovers. And pair it with my cauliflower Mexican rice, regular Mexican rice, or Instant pot cilantro lime rice.

Enchiladas:

And if you decide to meal prep a batch of my Instant pot tomatillo chicken. These tomatillo chicken enchiladas are a must. Because they can be meal prepped in advance or prepped the night of. And they are super easy and quick to put together.

Instant pot tortilla soup:

Better than any restaurant style tortilla soup, is this easy Instant pot tortilla soup. And if you have an air fryer, I highly suggest whipping up your own tortilla strips for this soup.

Massaged Mexican kale salad:

And we can’t forget about our greens right? And even if you have non kale lovers, I guarantee this massaged kale Mexican salad is sure to be a crowd pleaser.

Ceviche

And you can’t do Cinco de Mayo without some fresh wild caught cod ceviche. This is a great prep ahead meal option. And you want to give your ceviche at least 6 hours to marinate in the lime juices to allow it to cook the fish.

Mango Salsa:

And we can’t forget about the chunky salsa right? This mango salsa is one of my favorites to meal prep for the week. Because it goes great in fish tacos, chicken tacos, or steak tacos.
