Steak Fajitas:

I am usually team chicken fajitas but lately my body has been craving more steak. And so for part of this weeks meal prep, I made the most delicious steak fajitas. And what I love about fajitas is that the leftovers can be repurposed into a variety of other meals for the week. Like, steak and eggs, steak quesadillas, steak nachos, and more.

Entertaining:

This meal idea is also great if entertaining. Because you can throw together everything on a platter or create a build your own steak tacos or nachos bar on the counter. And everyone can pick and choose what they want and create their own creations and everyone is happy.

What you will need for steak:

  1. Organic grass fed + finished beef flat iron steak
  2. Olive oil or avocado oil
  3. Cilantro
  4. Garlic
  5. Taco seasoning
  6. Salt and pepper

How to prepare the steak:

Add the steak to a shallow dish and add all the ingredients to both sides and top with fresh cilantro. Let the steak marinate at room temperature for at least 30 minutes. You can marinate overnight just make sure to let the steak get to room temperature before cooking. Heat a pan or grill pan on medium high heat for about 5 minutes and add the steak. Cook your steak depending on how you like your steak. I cooked mine about 4 minutes each side.

Here are some temperatures to refer to when cooking your steak:
  • 120-125°F for rare
  • 130-140°F for medium rare
  • 145°F for medium
  • 150-155°F for medium well

But also take into account once the steak is done cooking, you want to let it rest for about 5-10 minutes and the steak will continue to cook a bit while resting, so the temperature will go up about 5°.

What you will need for Instant pot refried beans:

  1. Pinto beans
  2. Water
  3. Salt
  4. Garlic

How to prepare the Instant pot beans:

Add everything to Instant pot, close the instant pot, seal valve, and set to bean function for 45 minutes. And once done let the pressure release naturally. Carefully drain the liquid but be sure to reserve some of the bean juice for reheating leftovers. And with an immersion blender or masher, mash up the beans.

What you will need for Instant pot cilantro lime rice:

  1. White rice
  2. Chicken bone broth, water, or vegetable broth
  3. Optional: ghee or butter
  4. Salt
  5. Cilantro
  6. Lime juice

How to prepare rice in Instant pot:

Add rice, bone broth, and salt to Instant pot. Close, seal valve, and set to rice function for 12 minutes. And once done, let the pressure release naturally. If using the ghee, add the ghee, fresh chopped cilantro, and juice of limes, and mix.

What you will need for fajitas:

  1. Red and orange bell peppers
  2. Yellow onion
  3. Avocado oil
  4. Salt and pepper
  5. Jalapeño

How to prepare fajitas:

Add oil to a large pan on medium high heat and warm for a couple minutes. Add the sliced onions, bell peppers, salt and pepper, and sauté until nice and caramelized. I did about 1o minutes for mine.

Putting it all together:

And once everything is done you can either set up stations on the counter or throw it all on a platter to enjoy. I added queso fresco cheese, corn and flour tortillas, salsa, fajitas + onions, salsa, beans, rice, cilantro.

Steak Fajita Platter:

Ingredients

Flank steak:

  • Serves 4
  • 1 lb Belcampo Organic Grass fed + finished beef flat iron steak
  • 1/4 cup olive oil or avocado oil
  • 1 1/2 Tbsp taco seasoning
  • Salt and pepper to taste
  • 1/4 cup chopped cilantro
  • 3-4 garlic cloves

Instant Pot Refried Beans

  • Makes about 3 cups
  • 1 1/2 cups pinto beans
  • 8 cups of water
  • 4 garlic cloves
  • Salt to taste I did about 2 tsp of salt

Instant pot cilantro lime rice:

  • Makes 3 cups
  • Ingredients:
  • 1 cup long grain white rice
  • 1 1/2 cups chicken bone broth substitute water or vegetable broth
  • Salt and pepper to taste
  • 1/2 cup chopped cilantro
  • 2 limes juiced
  • Optional: 1 tbsp ghee or butter but I highly suggest it adds such a nice creamy flavor

Fajitas

  • 1 small yellow onion sliced
  • 2 red bell peppers sliced
  • 2 orange bell peppers sliced
  • 1 small jalapeño deseeded and chopped
  • 3 Tbsp avocado oil
  • salt and pepper to taste

Instructions

Flank Steak Instructions:

  • Add flank steak to a shallow dish
  • Add the olive oil, seasoning, minced garlic, salt and pepper to both sides
  • Top with fresh cilantro and let marinate at room temperature for at least 30 minutes (you can marinate overnight but let it come to room temperature before cooking)
  • Heat your pan with a little bit of oil on medium high heat for about 5 minutes to get it nice and hot
  • Sear the steak 3-4 minutes each side, depending on how you like your steak time will vary, cook until you reach your desired temperature based on how you like your steak 120 to 125°F for rare, 130-140°F for medium rare and 145°F for medium
  • Once done cooking let it rest on a cutting board for at least 10 minutes
  • Slice and enjoy

Instant Pot Beans Instructions:

  • Add rinsed beans to Instant pot
  • Add 8 cups of water to pot, make sure the beans are fully submerged with water
  • Add garlic and salt
  • Close Instant pot, seal valve, and set to been function for 45 minutes
  • Once done let pressure release naturally
  • Drain the liquid *but reserving some of the bean juice for reheating during the week
  • With an immersion blender, or masher, mash up the beans

Cilantro Lime Rice Instructions:

  • Soak rice in water for at least an hour
  • Drain and rinse the rice
  • Add rinsed rice and bone broth to Instant pot
  • Add in salt and pepper to taste
  • Mix
  • Close instant pot, seal valve, and set to rice function for 12 minutes (or manual low pressure for 12 minutes)
  • Once done quick release the pressure
  • Add the juice of limes, cilantro, ghee, and mix it all up

Fajitas:

  • Add the oil to a large pan on medium high heat and warm through, about 1-2 minutes
  • Add the sliced onions, bell peppers, jalapeño, salt and pepper to pan and mix
  • Sauté the veggies for about 10 minutes or until they are nice and carmelized, mixing throughout
