Mexican Cauliflower Rice:

Growing up Mexican rice was a staple in my everyday eats. But as you all know, I am always looking for ways to recreate my favorites into healthier options. And so enter in my Whole30, grain-free, dairy-free, Paleo Mexican cauliflower rice.

Ingredients you will need:

  1. Cauliflower rice ( I like using frozen)
  2. Jalapeno
  3. Tomato paste
  4. Cilantro
  5. Onions
  6. Garlic ghee (substitute avocado oil and 1-2 tsp minced garlic)
  7. Salt + pepper
  8. Paprika
  9. Water, vegetable broth, or chicken bone broth

How to prepare cauliflower rice:

First, I add my ghee and warm in a large pan. Then I add my diced onions, jalapeño, salt + pepper, and sautéed for 5 minutes. Next, I add my frozen cauliflower rice, seasoning, tomato paste, cilantro, and bone broth. I cook for about 5 minutes or until liquid is absorbed, top with more cilantro, and enjoy.

Meal prep ahead of time:

Not only is this meal super easy to prepare but it makes for a great option for meal prepping ahead of time. That way during the week, I just have to reheat, and enjoy with other items I meal prepped for the week. I store mine in an airtight container in the refrigerator for 3-4 days.

Mexican Cauliflower Rice

Makes about 3 cups

Ingredients

  • 2 cups cauliflower rice
  • 1 small jalapeño
  • 2 Tbsp tomato paste
  • 1/3 cup diced cilantro
  • 1/3 cup diced onions
  • 1 Tbsp garlic ghee
  • Salt + pepper to taste
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/4 cup Chicken bone broth Substitute water or vegetable broth

Instructions

  • Sauté your onions, jalapeño, with ghee salt + pepper for a few minutes
  • Add cauliflower rice, water/bone broth, seasoning, cilantro, and tomato paste and mix
  • Cook for a few minutes
  • Top with more cilantro
