7 Layer Dip:

This 7 layer dip is one appetizer you don’t want to pass up. It is a great dip to prep ahead of time and is super quick and easy to throw together if you need a last minute appetizer idea.

What you will need:

  1. 1 16 oz. can of traditional refried beans of choice (I bought mine at Sprouts)
  2. 1 10 oz. can of diced tomatoes with green chilies but if you can’t find one, just use diced tomatoes and a can of diced chilies.
  3. Taco seasoning
  4. Salt and pepper to taste
  5. Sour cream
  6. Homemade guacamole (3 large hass avocados, garlic powder, salt + pepper, cilantro, lime juice)
  7. Shredded cheese
  8. Olives
  9. Cherry tomatoes or roma tomatoes
  10. Green onions

How to prepare guacamole:

First things first, prep the homemade guacamole. Add avocado, lime juice, garlic powder, salt + pepper, and mix it all up until you get a creamy consistency. And set this aside while you prepare the bean mixture.

Prepping bean layer:

Add the beans, diced tomatoes with green chilies, taco seasoning, salt + pepper to taste, and mix it all up.

Layering the dip:

Add the bean mixture to a 7×11 or 8×8 baking dish and spread into an even layer. And then add an even layer f the homemade guacamole on top of the bean mixture. Next a layer of sour cream, shredded cheese, diced olives, diced cherry tomatoes, and green onions. And refrigerate the dip until ready to enjoy.

Can I prep this dip ahead of time?

Yes, this makes a great prep ahead appetizer option. Prepare it all the night before, cover, and store in the refrigerator until ready to enjoy.

Can I make this dip vegan?

Yes, substitute your favorite vegan sour cream and vegan shredded cheese to make it 100% vegan. And make sure whatever type of refried beans you are using, you make sure they are vegan.

Ingredients

Homemade guacamole:

  • 3 large hass Avocados
  • 2 tsp garlic powder
  • 3 small limes juiced
  • 1/3 cup chopped cilantro
  • Salt and pepper to taste

Bean layer:

  • 16 oz can mashed beans of choice
  • 10 oz can diced tomatoes with green chilies make sure to drain juices
  • 1 1/2 Tbsp Taco seasoning
  • Salt and pepper to taste

Additional Ingredients:

  • 1 1/2 cup sour cream
  • 1 1/2 cups shredded cheese
  • 6 oz can diced black olives
  • 1/2 cup diced cherry tomatoes
  • 1/4 cup diced green onions

Instructions

Guacamole instructions:

  • Cut the avocados in half and remove the pits
  • Add the avocado to a medium bowl with seasonings, lime juice, cilantro, and mix it all up
  • Refrigerate while you prepare the rest

Bean layer Instructions:

  • Add the beans, drained diced tomatoes and green chilies, taco seasoning, salt and pepper, and mix it all up

Dip Instructions:

  • Add an even layer of the bean mixture to a large round dish or pan
  • Add an even layer of sour cream on top of the bean mixture
  • Add an even layer of guacamole on top of the sour cream
  • Add an even layer of shredded cheese around the edge of the dish creating a circle of cheese
  • Add diced olives
  • Add diced cherry tomatoes
  • Add diced green onions
  • Add sour cream to a squeeze bottle and add some water to thin it out if too thick. Create lines forming a star and then a circle around outer edge and one in middle
  • Add half an olive to center, add 4 sliced olives on each side to form the spider
  • Refrigerate until ready to serve
