15 Minute Chicken Pesto Broccoli Slaw Pasta

Here is another simple 15 minute, one pan wonder you will have to add to your list for a quick weeknight meal. I’ve been trying to really hone in on showing you all quick and easy one pan meals. Not only are they my favorite dishes to make, but they are super easy, tasty, and will motivate you to continue cooking healthy. Once you realize that being healthy doesn’t equate spending hours upon hours in your kitchen you will have more fun prepping your healthy dishes, I promise.

Before preparing this dish, make sure to make a big batch of my pesto. I like to have a stash stored in my refrigerator because it goes great on a variety of dishes. It also allows for you to get creative with your dishes for the week, incorporating the pesto, so that leftovers are exciting and fun. For example, I prepared a big batch of pesto and I could use in a variety of dishes like these for the week:

Pesto Pumpkin Seed Salmon

Pesto Scallops

Pesto shrimp pasta

Once you have your pesto prepared, set it aside and start cooking your ground chicken. Once your ground chicken is cooked, add your pesto, and mix. Then add in your diced mushrooms and broccoli slaw, along with either some filtered water or bone broth. Cook for a few minutes or until the broccoli slaw gets softened. It really doesn’t get much more simpler than this dish my friends.

Pesto broccoli slaw pasta dish

Ingredients

  • 1 lb ground chicken
  • 1 bag broccoli slaw
  • 1 cup diced mushrooms
  • 1 1/2 cups dairy free pesto see below
  • Salt and pepper to taste
  • 1/4 cup chicken bone broth

Dairy free pesto:

  • 1 cup basil
  • Handful of cilantro
  • Handful of spinach
  • 2 garlic cloves
  • 1/4 cup hemp seeds
  • 1/4 cup olive oil
  • 1/2 cup pine nuts
  • 1 lemon juiced
  • Pinch of Celtic sea salt

Instructions

  • Prepare pesto by adding all ingredients to food processor or a high powered blender, process until you reach desired consistency.
  • Cook ground chicken with salt + pepper in a pan for 5 minutes
  • Add pesto and mix
  • Add broccoli slaw and chicken bone broth and cook for a few minutes
