Meal prepping meatballs is a staple during my meal prep Sunday’s. Not only are they easy and packed with flavor, but the flavor combinations are endless! This allows you to mix up the flavor combinations weekly and never leaves you never bored with eating the same meal every week. They are also a great addition to a variety of meals so during the week you don’t have to eat the same meal. You can add these meatballs to salads, pasta, zoodles, or in simple bowls with veggies and a starch.

For this week I was able to combine the meatballs in two different dishes:

  • Meatballs with zoodles and tomato sauce
  • Meatball bowls with roasted broccoli and air fried cauliflower gnocchi

Chicken meatballs

Makes 12


  • 1 lb ground chicken
  • 2 tbsp California garlic ghee
  • 1 red bell pepper diced
  • 1/3 cup fresh cilantro
  • 1 jalapeño deseeded and diced
  • 1/2 cup yellow onion diced
  • 2 tbsp Primal palate meat and potato seasoning
  • 1 tbsp oregano
  • 1/2 tsp coriander
  • 1/4 tsp smoked paprika
  • 1/2 tsp cumin

Air fried cauliflower gnocchi

  • 1 bag Trader Joe’s cauliflower gnocchi
  • Couple sprays of Chosen foods garlic avocado oil spray
  • Salt and pepper


Chicken meatballs Instructions

  • Heat 1 tbsp of ghee in pan and add onions, jalapeño, red bell pepper, cilantro, salt + pepper, and sauté for 5-7 minutes
  • Mix your ground chicken with seasonings
  • Add cooled veggies to ground chicken, mix, and form into meatballs
  • Heat another tbsp of ghee in cast skillet and cook a couple minutes each side

Air fried cauliflower gnocchi instructions

  • Add your frozen gnocchi to air fryer
  • Spray your gnocchi with the garlic avocado oil spray
  • Add salt + pepper
  • Cook 370 for 15 minutes flipping half way through
