I think there is this misconception that being healthy and eating healthy has to be complicated and take a lot of time. I believe the more you simplify it the easier it is to maintain a healthy lifestyle. Working full time and having long commutes to and from work, I could easily come up with a million excuses as to why I can’t live a healthy lifestyle. However, my health is my number one priority and no matter how busy I am I will make the time to provide my body quality and healthy meals.

The secret to getting it all done in 15 minutes is to multi task in the kitchen if you are making this after work. This means utilizing all your kitchen appliances when you can so you can get it done in no time.

You can also meal prep the pesto ahead of time so that it is one less thing you have to prep after work.

Pesto pumpkin wild caught salmon

Ingredients

Dairy free hemp seed spinach cilantro pesto

  • 1 cup basil
  • Handful of cilantro
  • Handful of spinach
  • 2 garlic cloves
  • 1/4 cup hemp seeds
  • 1/4 cup olive oil
  • 1/2 cup pine nuts
  • 1 lemon juiced
  • Pinch of Celtic sea salt

Cauliflower gnocchi

  • 1 package Trader Joe’s cauliflower gnocchi
  • 1 tbsp California garlic ghee
  • 1 tbsp everything but the bagel sesame seed seasoning

Instructions

Dairy free hemp seed spinach cilantro pesto

  • Pulse all ingredients for pesto in food processor
  • Add a layer of pesto to wild caught salmon filet and top with pumpkin seeds
  • Bake 375 for 15-17 minutes

Cauliflower gnocchi

  • Heat your ghee In pan on medium heat
  • Add your frozen cauliflower gnocchi and cover pan for 5 minutes (let them be)
  • Uncover your pan and sprinkle with everything but the bagel sesame seed seasoning and cook 5-8 minutes, stirring once or twice.
  • If sticking to pan add more ghee or 1 tbsp of water
