Addictive cucumber salad:
Now this is one addictive cucumber salad! And what I love about it, is it is super quick and easy to throw together. And you can add this salad to a variety of dishes for the week.
Ingredients you will need:
- Persian cucumbers
- Sesame oil
- Coconut aminos (substitute soy sauce)
- Chili powder
- Rice vinegar
- Garlic
- Flakey salt
Optional add ins:
- Honey
- Lime juice
- Red chili flakes
How to prepare:
This salad is super simple to prepare. First, slice the cucumbers and add to a bowl. Add the rest of the ingredients, mix, and refrigerate for 10 minutes.
What to serve this with:
This cucumber salad can be enjoyed by itself as a snack or used as a garnish to a variety of dishes. But I personally find it pairs best with some delicious air fried teriyaki chicken bowls, check it out here.
How to store:
I like to store in an airtight container in the refrigerator and use within 2 days. Because the longer they sit in the refrigerator they will loose the crunch factor they have on the first day they are prepped.

- 4 persian cucumbers
- 2 Tbsp sesame oil
- 1 1/2 Tbsp coconut aminos
- 1 1/2 Tbsp rice vinegar
- 1/4 tsp chili powder
- 2 garlic cloves minced
- Flakey salt topping
Optional add ins:
- 1 tsp Manuka Honey
- 1/4 tsp chili flakes
- 1 small lime juiced

- Chop your cucumbers and add to a bowl
- In a separate bowl whisk the sesame oil, coconut aminos, rice vinegar, chili powde
- Pour the sauce over the cucumbers, mix, top with flakey salt if using
- Refrigerate for 15 minutes
