Air fried chicken teriyaki meatball bowls:

There is no denying it, I am a sucker for all types of bowls for easy weeknight dinner options during the week. Because they are easy to throw together, the flavor combinations are endless, and everyone can tailor their bowls to their liking. It’s a win win for everyone!

Air fried chicken teriyaki meatballs:

For this bowl, I am using air fried chicken teriyaki meatballs as the star of the show. But feel free to use teriyaki chicken thighs, breast, or even use a different ground meat for your meatballs.

Ingredients you will need for meatballs:

  1. Ground chicken (substitute any type of ground meat you like)
  2. Egg
  3. Garlic powder
  4. Ground ginger powder
  5. Green onions
  6. Coriander
  7. Siete Foods Grain Free Chips (substitute: crackers, panko bread crumbs, bread crumbs, or 2 tsp coconut flour)
  8. Salt
  9. Ground pepper

How to prepare meatballs in air fryer:

My favorite way to cook meatballs is in my air fryer. Because they get such a nice crunch on the outside and super juicy and flavorful in the inside. Start by whisking egg in a medium bowl, add in the ground chicken and mix. And then add in the seasonings, chopped green onions, and mix until incorporated. Using a Tbsp ice cream scoop, scoop out the meatball mixture, and add to a greased air fryer dish. And you can try and form into a pretty meatball with your hands. But the mixture is pretty sticky so you may need to wet your hands with water and form.

Bake time in air fryer:

And once the meatballs are in the air fryer, set to 400°F for 18 minutes.

What if I don’t have an air fryer?

And don’t worry, if you don’t have an air fryer you can still make these. You can either bake in the oven or pan fry with some oil over stove top. If baking, I would bake on 350°F for 20-25 minutes.

Ingredients you will need for teriyaki sauce:

  1. Coconut aminos (substitute soy sauce)
  2. 1 small cara cara orange (substitute any type of orange or use 3-4 Tbsp orange juice)
  3. Salt
  4. Pepper
  5. Garlic powder
  6. Ground ginger
  7. Arrowroot powder
  8. Optional but highly recommend: 1 Tbsp Manuka Honey

Preparing the sauce:

Add all the ingredients to a small sauce pan on medium low heat. And whisk the sauce for 5 minutes or until it starts to thicken a bit. Remove from the heat and pour over the cooked meatballs.

Putting the bowls together:

And for the fun part, putting your delicious bowls together! I used Instant pot bone broth rice, air fried chicken teriyaki meatballs, roasted broccoli, addicting cucumber salad, and topped with sesame seeds, and green onions.

Air Fried Chicken Teriyaki Meatballs:

Makes 14 small meatballs

Ingredients

Meatball Ingredients:

  • 1 lb ground chicken substitute any type of meat you like
  • 1 large egg
  • 1/2 cup fineely chopped Siete Foods Grain Free Chips substitute crackers, bread crumbs, or 2 Tsp coconut flour
  • 1/4 tsp salt
  • 1/4 tsp ground pepper
  • 1 tsp garlic powder
  • 1 tsp ground ginger
  • 1/4 tsp coriander
  • 1/3 cup chopped green onions

Ingredients for Teriyaki Sauce:

  • 1/2 cup coconut aminos
  • 1/2 tsp sesame oil
  • 1 small orange juiced
  • 1/4 tsp garlic powder
  • 1/4 tsp ground ginger
  • 1/4 tsp salt
  • 1/4 tsp ground pepper
  • 1 tsp arrowroot flour
  • Optional: 1 Tbsp Manuka Honey

Garnish:

  • 1-2 Tbsp chopped green onions
  • 1 Tbsp sesame seeds
  • Cucumber salad

Addictive Cucumber Salad:

  • 4 persian cucumbers
  • 2 Tbsp sesame oil
  • 1 1/2 Tbsp coconut aminos
  • 1 1/2 Tbsp rice vinegar
  • 1/4 tsp chili powder
  • 2 garlic cloves minced
  • Optional: Flakey salt topping

Instructions

Instructions for air fried meatballs:

  • Whisk egg in a medium bowl
  • Add ground chicken, seasonings, chopped green onions, crushed chips, and mix until incorporated
  • With a Tbsp ice cream scoop, scoop out the mixture, and form meatballs as best as you can (it will be sticky but you can wet your hands to help form or just scoop straight into baking dish)
  • Add meatballs to a greased air fryer dish
  • Bake 400°F for 18 minutes

Baking in oven time:

  • Follow the same instructions for preparing the meatballs, only add to a lined baking dish, and bake 350° for 20-25 minutes

Instructions for Teriyaki sauce:

  • Add all the ingredients to a small sauce pan
  • On medium low heat, whisk the mixture for 5 minutes
  • Pour the sauce over the cooked meatballs
  • Sprinkle sesame seeds all over
  • And top with chopped green onions
  • Serve over rice, roasted broccoli, and cucumber salad

Instructions for addictive cucumber salad:

  • Chop your cucumbers and add to a bowl
  • In a separate bowl whisk the sesame oil, coconut aminos, rice vinegar, chili powde
  • Pour the sauce over the cucumbers, mix, top with flakey salt if using
  • Refrigerate for 15 minutes
  • Enjoy
