Taco fish bowls:

If you are looking for a quick weeknight dinner to prep, then these taco fish bowls are a must! They took just ten minute to prepare and were so tasty. And most of the items are perfect for prepping ahead of time. Night you plan having, just cook the fish and you are ready to go.

 

Ingredients you will need:

  1. Instant pot cilantro lime rice
  2. Wild caught fish of choice ( I used wild caught cod and wild caught halibut)
  3. Primal Palate Taco seasoning (substitute 1/4 tsp of each: chipotle powder, chili powder, paprika, cumin)
  4. Salt + pepper
  5. Red bell pepper
  6. Cilantro
  7. Cabbage
  8. Ghee
  9. Olive oil
  10. Avocado ranch crema or avocado chunks

Preparing the Instant pot cilantro rice:

I like to meal prep a batch of my Instant pot cilantro rice on Sunday to have as a side dish for a variety of meals during the week. And it makes it super convenient to get dinners done in no time having this already prepped. But if you don’t have it prepped in advance, from start to finish it only takes about 20 minutes.

Add rice, chicken bone broth, salt and pepper to taste, 1 Tbsp of ghee to Instant pot, and mix.  Close the Instant pot, set to rice function, and cook for 12 minutes. And once it is done quick release the pressure, add in the juice of 2 limes, fresh cilantro, and fluff with a fork.

If prepping ahead of time, the night you plan on enjoying, add a little bit of water to a pan, and warm through for 3-5 minutes.

Prepping the fish:

I defrost my fish in the refrigerator over night if using frozen filets. And season both sides of fish with olive oil,  Primal Palate Taco seasoning, garlic powder, salt and pepper to taste. Add ghee or any type of oil to a pan and warm the oil for about 30 seconds-1 minute. Add the fish and cook a few minute each side.

Preparing the avocado ranch crema:

This is another prep ahead side dish to have on hand for the week. Simply add avocado, salt and pepper, apple cider vinegar, lime juice, water, cilantro, garlic powder, Primal Palate Garden Ranch seasoning to a blender, and blend it all up.

Putting the bowls together:

Add the rice to the bowls, add the cooked fish on top of rice, add chopped red bell pepper, cabbage, fresh cilantro, and homemade avocado ranch crema.

Ingredients

Instant pot cilantro lime rice:

  • 1 cup long grain white rice
  • 1 1/2 cups chicken bone broth substitute water or vegetable broth
  • Salt and pepper to taste
  • 1/2 cup chopped cilantro
  • 2 small limes juiced
  • 1 Tbsp Ghee or butter Optional: but I highly suggest it adds such a nice creamy flavor

Pan fried fish:

  • 2 4-6 oz wild caught fish of choice I used wild caught cod and halibut
  • 1 Tbsp Primal Palate Taco seasoning (substitute 1/4 tsp of each: chipotle powder, paprika, cumin, chili powder)
  • Salt and pepper to taste
  • 1/4 tsp garlic powder
  • 2 tbsp olive oil
  • 1 tbsp ghee or olive oil

Avocado ranch crema:

  • 1 large avocado
  • 1/4 cup water can add more if you like a thinner consistency
  • 2 small limes juiced
  • 2 Tbsp apple cider vinegar
  • 1 Tbsp Primal Palate Garden Ranch seasoning substitute 1/4 tsp of each: onion powder, dried chives, and dried parsley
  • Salt and pepper to taste
  • 1/2 tsp garlic powder
  • 1/2 cup chopped cilantro

Instructions

Instructions for Instant pot cilantro lime rice:

  • Soak rice in water for at least an hour
  • Drain and rinse the rice
  • Add rinsed rice, bone broth, salt and pepper to taste, ghee, to Instant pot, and mix
  • Close instant pot, seal valve, and set to rice function for 12 minutes (or manual low pressure for 12 minutes)
  • Once done quick release the pressure
  • Add the juice of limes, cilantro, and with a fork mix and fluff the rice

Instructions for pan fried fish:

  • Season your fish on both sides with olive oil, and seasonings
  • Add ghee to pan and warm oil for 30 seconds- 1 minute
  • Add fish to pan and cook 2-3 minutes each side

Instructions for avocado ranch crema:

  • Add all ingredients to blender and blend it up
  • Depending on how thick you want your crema, you may need to add more water to thin it out, I personally like mine thick and creamy
  • Store in an airtight container in refrigerator for up to 5-6 days
