Ahi Tuna poke bowls:

Build your own tuna poke bowls at home is such a great weeknight dinner option or a great entertaining idea. Because everyone can customize their poke bowls to their liking. And every is happy and satisfied.

Ingredients you will need:

  1. Vital Choice Ahi Tuna Poke Kit (or you can purchase sushi grade tuna at your market)
  2. Instant pot bone broth sushi rice (can use cauliflower rice or brown rice too)
  3. Cucumbers
  4. Homemade spicy mayo sauce
  5. Coconut aminos
  6. Sesame oil
  7. Shredded carrots
  8. Ginger
  9. Cilantro microgreeens
  10. Everything but the bagel seasoning
  11. Roasted seaweed
  12. Avocado
  13. Jalapeño
  14. Green onions
  15. Mango
  16. Spring mix greens

How to make Instant pot bone broth sushi rice:

Preparing the sushi rice is super simple! Add 1 cup of soaked and rinsed organic sushi rice to Instant pot. And add 1 1/2 cups bone broth or vegetable broth,  1 Tbsp turmeric ghee (optional), 1/4 tsp salt, and set to sauté function, to melt the ghee if using. Turn off the sauté function, close Instant pot, seal valve, and set to rice function for 12 minutes. And once done let pressure release naturally, open Instant pot, and with a fork fluff the rice.

How to make spicy mayo sauce:

Add mayo, sriracha, honey or maple syrup, lime juice, coconut aminos to a bowl, and mix. And if you want the sauce to be a thinner consistency, add 1 Tbsp at a time of water, and whisk until you reached desired consistency. And keep it stored in an airtight container in refrigerator for up to 5 days.

Preparing the ahi tuna poke:

I am using Vital Choice ahi tuna poke kit which is super convenient and delicious. And it comes with a seasoning pack for seasoning the ahi tuna poke. The seasonings include: black and white sesame seeds, dried seaweed, sea salt, dried scallions, crushed red chili.I also added 3 Tbsp coconut aminos and 1 Tbsp sesame oil to the ahi tuna. And then mixed and let marinate for about 15 minutes in refrigerator.

Creating the poke bowls:

And now comes the fun part, creating the poke bowls. I like to have everything out on the counter in separate dishes. Because then everyone can pick and choose how they want to create their poke bowls. Start by adding the spring mix, rice, poke, and then top with the topping of your choosing. And drizzle with the spicy mayo and sprinkle of everything but the bagel seasoning.

What if I have leftovers?

If you have any leftovers, you can refrigerate in an airtight container, but I suggest eating the next day. I typically will consume within 1-2 days.

Build Your Own Ahi Tuna Poke Bowls:

Serves 4

Ingredients

Ahi Tuna Poke:

  • Vital Choice Ahi Tuna Poke Kit substitute sushi grade tuna or salmon
  • 1 Seasoning pack substitute: black and white sesame seeds, dried seaweed, sea salt, dried scallions, crushed red chili
  • 2-3 Tbsp coconut aminos
  • 1 Tbsp sesame oil

Instant Pot Bone Broth Sushi Rice:

  • Makes 4-5 cups
  • 1 cup organic sushi rice
  • 1 1/2 cups bone broth or vegetable broth
  • 1 Tbsp turmeric ghee optional
  • 1/4 tsp salt

Spicy Mayo Sauce:

  • Makes about 1/2 cup
  • 1/4 cup mayo substitute greek yogurt or dairy free mayo
  • 1-2 Tbsp srriracha
  • 1 Tbsp honey substitute maple syrup
  • 1/2 a lime juiced
  • 2 Tbsp coconut aminos substitute soy sauce
  • Optional: 1-2 Tbsp filtered water if you want thinner consistency

Poke Bowl Toppings:

  • Shredded carrots
  • Persian cucumbers
  • Ginger
  • Roasted seaweed
  • Avocado
  • Jalapeño
  • Green onions
  • Coconut aminos
  • Everything but the bagel seasoning
  • Spring mix greens
  • Cilantro microgreens
  • Mango

Instructions

Ahi Tuna Poke Instructions:

  • Add all the ingredients to a bowl, mix, and marinate for 15 minutes in refrigerator

Instant Pot Bone Broth Sushi Rice Instructions:

  • Soak and rinse your sushi rice
  • Add rice, bone broth, ghee, salt to pot
  • Set to sauté function and sauté until the ghee is melted (if you aren’t adding ghee skip this step)
  • Turn off sauté function, close Instant pot, seal valve, and set to rice function for 12 minutes
  • Once done, let pressure release naturally
  • Open Instant pot and with a fork fluff the rice

Spicy Mayo Instructions:

  • Add all ingredients to a bowl and mix
  • If you want a thinner consistency, add 1 Tbsp of water at a time, mix, and continue until you reach desired consistency
  • Refrigerate in an airtight container until ready to use

Putting Bowl Together:

  • Add spring mix as base
  • Add rice
  • Add ahi tuna poke
  • And top with desired topping
  • Drizzle top with spicy mayo
  • Sprinkle everything but bagel seasoning on top
