You all know I love me some quick and delicious one pan wonders right? Well here is another one to add to your list, Mexican shrimp + cauliflower rice stir fry. It only takes 15 minutes and is extra delicious, no one would guess this meal only took 15 minutes.
What you will need:
- Wild caught shrimp ( I like to buy mine at Trader Joes or from Vitachoice)
- Cauliflower rice
- Red and yellow bell peppers
- Onions
- Ghee
- Salt and Pepper
- Primal Palate Meat and Potato Seasoning (sub cumin, paprika, coriander)
- Cilantro
- Chicken Bone broth or water
You are going to add your ghee to a large pan and heat. Once warm, add in your shrimp with salt + pepper and cook a couple minutes. Transfer to a plate and add in your onions, bell peppers, with a little more ghee, salt and pepper, and sauté for 5-7 minutes. Then add in your cauliflower rice, with the meat and potato seasoning, cilantro, and little bit of bone broth to help steam it all quicker. Cook for a few minutes, then add back in the shrimp, with additional cilantro, mix, and enjoy! It doesn’t get any easier than that my friends.
One pan Mexican Shrimp cauliflower rice stir fry
Ingredients
- 1 lb wild caught shrimps
- 1 Tbsp Fourth and Heart California garlic ghee
- 1/2 Tbsp Primal Palate meat and potato seasoning
- 2 cups riced cauliflower
- 2 red bell peppers chopped
- 2 yellow bell peppers chopped
- 1/3 cup diced onions
- 1/2 cup diced cilantro
- Salt and pepper to taste
- 1/4 cup chicken bone broth sub water or vegetable broth
Instructions
- Heat your ghee in a large pan
- Add your shrimp seasoned with salt and pepper and cook a couple minutes each side
- Transfer shrimp to a dish
- Add your onions, bell peppers, and a little bit more ghee and sauté for 5-8 minutes or until nice and caramelized
- Add your cauliflower rice, meat and potato seasoning, and bone broth, mix, and cook a couple minutes
- Add the cilantro and shrimp back in and mix
