Preparing lunches on the go:

When it comes to eating on the go, it is not always the easiest to do. But since I have been doing it for over 7 years now it is part of my lifestyle. And I honestly feel that I have it down to a science and it allows me to meal prep it all in about an hour.

 Tips for preparing lunches on the go:

 

  1. Think about where you will be during your work day, because if you will have access to an office kitchen then you can prepare different items.
  2. If you are like me and eat your lunches in your car, then you will want to brainstorm meals that will taste good cold.
  3. Make sure to purchase some good quality Tupperware to be able to store your lunches in, a lunch pail to fit everything in, and some reusable forks and spoons.

Here are my favorites lunches to prep for on the go:

Salmon bowls for on the go:

Air fried everything but the bagel salmon bowls with cauliflower mashed “potatoes,” and roasted broccoli. The nice thing about this dish is that it can be eating cold or hot. I personally don’t like reheating fish and so I enjoy this one cold.

Chicken + bacon salad:

This Chicken + bacon salad for lettuce wraps is perfect for meal prepping when you need a dish that taste good cold. And it is super convenient to just scoop up some of the chicken salad, roll it into butter lettuce tacos, and eat while on the go. Lamb meatball bowls:

Air fried lamb meatball bowls with cauliflower mashed “potatoes,” and a cucumber + olive salad. This dish can be eaten cold or hot. I have tried it both ways and both ways taste just as good. I find that the cucumber + olive salad make this dish enjoyable eaten cold.
