One of my favorite items to meal prep when I am pressed for time is a chicken salad. I buy a rotisserie chicken, dice up the chicken, add my ingredients, and in no time you have a delicious meal for on the go. Now this chicken curry salad is one of my favorite combinations. Something about the notes of curry mixed with the flavor of apples and raisins makes it super tasty. There are a variety of combination you can make with chicken salads, but if I had to choose one flavor combination it definitely would be these chicken curry salad.

If you can’t do dairy or you don’t like mayonnaise  then I would recommend you try making it with coconut cream or any non-dairy plain yogurt to give it that creamy flavor. If you aren’t familiar with coconut cream, that is the hard part of the coconut milk when you let it sit in the fridge.

Here is what you’ll need:

  1. Rotisserie chicken
  2. 1 lime juiced + zest
  3. Raisins
  4. Diced Gala Apple
  5. Cilantro
  6. Celery
  7. Curry powder
  8. Avocado oil based Mayo (I love using Primal Kitchen’s)
  9. Greek yogurt
  10. Chopped pecans

Simply add everything to a bowl, mix, and let sit in the fridge to chill for up to an hour before serving. This actually taste better the second or third day around, since it has more time to marinate in all the flavors. I enjoy mine on some butter lettuce as wraps but you could add to bread to make a sandwich, tortillas, or over a salad.

Chicken curry salad

Ingredients

  • 2 cups chopped cooked chicken
  • 3 celery stalks diced
  • 1/2 apple diced
  • 1/4 cup raisins
  • 1 tsp curry
  • 1/2 tsp cinnamon
  • Juice of 1/2 lime
  • 1/4 cup mayo
  • 1/4 cup full fat Greek yogurt
  • 1/3 cup diced cilantro
  • 1/4 cup chopped pecans

Instructions

  • Mix all ingredients and chill for an hour.
  • Serve on butter lettuce as an easy peasy wrap idea.
