Chicken + bacon salad:

One of my favorites to meal prep when I am pressed for time is a chicken salad. I like to speed up the process by purchasing a rotisserie chicken and chopping it up for a time saving hack. But if you want you can also poach some chicken breast. This salad is super simple and basically fool proof.

What you will need for the salad:

  1. Rotisserie chicken
  2. Celery
  3. Cilantro
  4. Avocado oil mayo or full fat greek yogurt (if you are doing a Whole30 please be sure to use Mayo instead of greek yogurt)
  5. Cooked bacon
  6. Juice of limes
  7. Almond slivers
  8. Red wine vinegar
  9. Butter lettuce
  10. Salt and pepper to taste

How to prepare the salad:

Preparing the salad is simple and takes about 5 minutes to prepare. You are going to start by chopping up your chicken and adding to a bowl. Then add in your chopped cilantro, celery, chopped cooked bacon, mayo or greek yogurt, juice of limes, red wine vinegar, and mix. Add salt and pepper to taste, your almond slivers, and mix. Store in the refrigerator for about an hour or so before serving.

How to serve the salad:

For serving the salad there are a few options. You can serve it on butter lettuce for a refreshing lettuce wrap. Or add it to your favorite bread to make a delicious sandwich. And lastly add it on top of your favorite greens for a fresh salad bowl.

Ingredients

  • 2 cups chopped cooked chicken
  • 3 celery stalks diced
  • 4 pieces cooked bacon
  • Juice of 2 limes
  • 1/3 cup full fat Greek yogurt sub mayo
  • 1/3 cup diced cilantro
  • 1/4 cup almond slivers
  • Salt and pepper to taste
  • 2 Tbsp red wine vinegar
  • Butter lettuce

Instructions

  • Mix all ingredients and chill for an hour. Serve on butter lettuce as an easy peasy wrap idea.
