White Chocolate Chip Pumpkin Cookies:

These grain-free white chocolate chip pumpkin cookies are what you need in your life this fall. If you are like me and love a slight crunch on the outside, but gooey and soft in the middle type of cookie, then make these ASAP. Not only are they delicious but they are the easiest to prepare, because you know I am all about those easy recipes.

What you will need:

  1. Coconut oil
  2. Pumpkin puree
  3. Egg
  4. Vanilla extract
  5. Maple sugar (substitute coconut sugar or any sugar you prefer)
  6. Almond flour
  7. Baking soda
  8. White chocolate chips (substitute chocolate chips)
  9. Pumpkin pie spice

Easy Steps for making cookies:

To prepare these cookies are super easy. First, you are going to add the wet ingredients to a bowl and mix with a handheld mixer. Then, add the dry ingredients, mix, and then fold in white chocolate chips. Store the batter in the refrigerator for at least 30 minutes. Once the dough is done chilling, with an ice cream scoop add batter to a lined baking sheet. And then bake 350 F for 10-12 minutes. Remove cookies from pan, add to a cooling rack, and let cool for a few minutes.

How to store cookies:

I prefer to store my cookies in an airtight container in the refrigerator. When I want to have one, I just add to my convection oven and heat up a few minutes on 350 F. These cookies also freeze well, so just add them to an airtight container and store in the freezer for another day.

Makes 18

Ingredients

  • 1/4 cup pumpkin purée
  • 1/2 cup coconut oil softened not melted but softened
  • 1 room temperature egg
  • 1 1/2 tsp vanilla extract
  • 1/2 cup Primal Palate maple sugar sub coconut sugar or any sugar you use
  • 1 1/2 cup almond flour
  • 1 tsp baking soda
  • 2 tsp pumpkin spice
  • 1/2 cup white chocolate chips sub chocolate chips

Instructions

  • Mix wet ingredients with a handheld mixer
  • Add in dry and mix
  • Fold in chocolate chips
  • Let batter sit in refrigerator for 20-30 minutes
  • With an ice cream scoop add batter to lined baking dish, top with more chocolate chips
  • Bake 350 for 10-12 minutes
  • Remove from pan and let cool for 5 minutes
