No Bake Pumpkin Pecan Pie Bliss Balls:

As you guys know, I have been on a major pumpkin kick and I am not mad about it one bit. So I combined my two fall favorites, pumpkin and pecan to create these pumpkin pecan pie bliss balls. And did I mention these require only 9 ingredients, no baking required, and taste like fall.

What you will need:

  1. Sprouted gluten free quick oats
  2. Raw pecans
  3. Pecan butter
  4. Flaxseed meal
  5. Pumpkin puree
  6. Nutmeg
  7. Cinnamon
  8. Pumpkin pie spice
  9. Medjool dates

Easy Steps for making bliss balls:

Making bliss balls are simple. You are going to add all the ingredients to a food processor and process for about 30 seconds to a minute. But don’t worry if you don’t have a food processor you can blend in a high powered blender. But I would soak the dates and oats over night to softened, so that your blender doesn’t have to work too hard. Then once your batter is ready, roll into 14 balls, and store either in your refrigerator or freezer.

Optional add in’s:

Feel free to add in some plant based vanilla flavored protein powder or a cinnamon bun protein powder for an added boost. However, if you do add in some protein powder, you may need to add some filtered water, if the batter is too thick. So start with 1 Tbsp of water at a time and add until you reach desired consistency. You can also add in some maple syrup and maple extract if you want a sweet maple flavor. Lastly, you can try different nuts/seeds, but I have not experimented with different nut/seed combinations yet to tell you which one’s work best.

Makes 14 small bliss balls

Ingredients

  • 1/2 cup raw pecans
  • 7 medjool dates
  • 1/4 cup pumpkin purée
  • 1/2 cup gf sprouted quick oats
  • 1 tbsp flaxseed meal
  • 1 1/2 Tbsp pecan butter
  • 1/4 tsp cinnamon
  • 1/4 tsp nutmeg
  • 2 tsp pumpkin spice seasoning

Instructions

  • Add all ingredients to food processor and process for about 30 seconds to a minute
  • You want the dough to be sticky and easily able to form balls
  • Roll into 14 small balls
  • Store In refrigerator or freezer
