Flourless chocolate chip pumpkin bars:
Tis the season for all things pumpkin spice and everything nice. If you love pumpkin, easy recipes, then you are going to fall in love with these flourless chocolate chip pumpkin bars. They are super gooey, tasty, easy to prepare, and only require 10 ingredients you probably already have in your pantry. And they freeze nicely, so double the batch and save some for a rainy day.
What you will need:
- Pumpkin puree
- Chocolate chips
- Vanilla extract
- Cashew butter (sub any nut/seed butter)
- Manuka Honey (sub maple syrup)
- Pumpkin spice
- Cinnamon
- Baking soda
- Organic pasture raised Eggs
- Sea salt
Easy steps for making the bars:
Mix all ingredients in a medium size bowl except for the chocolate chips. And once the batter is mixed fold in the chocolate chips. And then add the batter to a greased 8×8 baking dish, top with more chocolate chips, and bake 350 F for 35-40 minutes. Let them cool completely, and store in the refrigerator overnight in the fridge to firm up if too wet.

Ingredients
- 1 cup pumpkin purée
- 1 cup cashew butter
- 2 eggs
- 1 tsp baking soda
- 1/4 tsp sea salt
- 1/2 cup maple syrup or honey
- 1 1/2 tsp pumpkin spice
- 1/2 tsp cinnamon
- 1/2 cup chocolate chips + more for top
- 1 tsp vanilla extract
Instructions
- Mix all ingredients except the chocolate chips in a bowl
- Fold in chocolate chips
- Add to a greased 8x8 dish
- Bake 350 F for 35-40 minutes
- Store in fridge (if you find them super wet after the 35-40 minutes, don't worry, once you store in fridge overnight they will firm up)
