I really love a good stuffed bell pepper, but since our weather has been more chilly than anticipated, I thought a nourishing soup would be just perfect. I used similar ingredients for my stuffed bell peppers but made it into a soup version. This soup takes about 30 minutes to prepare, made with real ingredients, is Whole30 approved, dairy free, and gluten free.
I made mine over stove top but you can also make this in your slow cooker or instant pot. What you will need to do includes these simple steps:
- Sauté your onions, jalapeños, with salt + pepper, and avocado oil for 5-7 minutes in a large pot
- Then add in your sliced bell peppers and cook for a few minutes
- In a separate pan while your veggies are cooking, cook your ground turkey with the seasoning. Cook until no longer pink, about 5-7 minutes on medium low heat
- Then add in the ground turkey with the veggies, add bone broth, water, zucchini, cilantro, and bring to a boil
- Once boiling then cover pot and simmer for about 30 minutes or longer (depending on how much time you have)
The nice thing about this soup is it makes enough to have a couple more meals for the week. You can also double the recipe and freeze half for a night you don’t feel like cooking.

Stuffed Bell Pepper Soup
Ingredients
- 1 lb Buy ranch direct ground turkey
- 1/2 cup diced onion
- 1 jalapeño deseeded
- 1 tbsp avocado oil
- 3 red bell peppers
- 1 large zucchini
- 1/2 cup chopped cilantro
- 1 tbsp primal palate super gyro seasoning
- 1/2 tsp turmeric
- 1/4 tsp smoked paprika
- 1/4 tsp cumin
- 1/4 tsp coriander
- Salt and pepper to taste
- 1 package Bonafide Provisions turkey bone broth + 1 cup filtered water
Instructions
- Heat pot with avocado oil
- Add onion, jalapeños, and salt and pepper and cook for 5-7 minutes
- Add in bell peppers and cook another 3-5 minutes
- In a separate pan cook your ground turkey with the seasoning
- Add cooked ground turkey to veggie mixture
- Add Bone broth, water, chopped zucchini, and cilantro to pot
- Bring to a boil and simmer covered for 30 minutes
