Preparing lunches on the go:

Cook and clean once a week is the way to go! With a busy schedule it saves me time, energy, money, and reduces food waste. It is something that needs to happen with my lifestyle and I have it down to a science that it doesn’t have to take me hours upon hours to complete.

 Whats on the menu for the week:

Instant pot orange chicken, cauliflower rice, and roasted broccoli

Trader Joes cauliflower gnocchi with ground turkey and tomato sauce

Spicy andouille sausage with caramelized onions, bell peppers, and instant pot cauliflower “mashed potatoes.”

Why do I pre portion out the meals?

When it comes to portioning out the meals, I don’t weigh or measure anything. I simply just eye ball what will be enough for me and package it up in my Tupperware. By doing this it saves times during the hectic mornings, requires no stress during the week to think about what you will eat, and it saves you money.

Do I ever get bored of eating the same thing?

I don’t necessarily get bored of my meals because I find that I always load them up with flavor and I’m constantly mixing it up every week. When planning your meal preps I suggest you focus on creating meals that you are craving and know you will enjoy throughout the week.

How do I come up with menu for the week?

Typically I brainstorm ideas on Saturday and do my shopping that day. I go based off items I am craving or meals I can’t go a week without. Such as my salmon bowls, you will see me eating these at least once a week.
