Better than take out orange chicken:

One of Todd’s favorite’s is Panda Express take out. He craves it probably once a month, so I have been determined to try and recreate his favorites there for a healthier option for him. Now mind you, he is SUPER picky, so if you see in my captions over on Instagram “boyfriend approved,” you know your picky eaters will love.

What to cook it in:

I created this recipe in my instant pot, because I am obsessed with mine, but I have had some of my followers try it out in a slow cooker and it has turned out just as good.

What you will need to make this dish at home:

  1. Diced chicken
  2. Tapioca flour (sub xanthum gum, cornstarch) this is basically used to thicken the sauce
  3. Avocado oil
  4. Sesame oil
  5. Coconut aminos
  6. Date syrup (sub honey or maple syrup)
  7. Juice and zest of an orange
  8. Chili paste
  9. Minced ginger
  10. Minced garlic
  11. Salt + pepper to taste
  12. Chicken Bone Broth

How to cook you orange chicken:

Set your instant pot to the saute function and heat your avocado oil. Once warm add in your minced garlic, ginger, and saute for a minute. Then add in your chicken in which you coated with your tapioca flour and salt and pepper, brown a couple minutes each side. Add in the rest of the ingredients, mix, close your instant pot, seal valve, and set to manual high pressure for 5 minutes. Once it is done let the pressure release on its on for about 10-15 minutes. Then release any additional pressure by turning the valve towards you, open instant pot, serve with white rice, and roasted broccolini.
