Zucchini Fritters:

I was in the mood for some zucchini fritters for an easy option for meal prep. And I made mine grain-free, Whole30 compliant, and Paleo friendly.

Ingredients you will need:

  1. Egg
  2. Zucchini
  3. Bacon
  4. Coconut flour
  5. Green onions
  6. Salt and pepper to taste
  7. Italian seasoning
  8. Garlic powder
  9. Ghee or any oil you use

How to prep the zucchini:

The first thing I like to do is make sure I draw out the water in my zucchini. And the way I do this, is by adding my grated zucchini to a colander, sprinkle some sea salt all over, and let it sit for 10 minutes. And once it has sit for 10 minutes I use a mesh bag and squeeze our the water. But. if you don’t have a mesh bag feel free to use a towel or cheese cloth.

Prepping the fritters:

Add the zucchini to a bowl, add the rest of the ingredients (except oil). and mix. And once everything is nice and incorporated I form into 8 small patties.

Cooking fritters:

I added my ghee to a large pan and warmed. Then I add my fritters and cooked 2-3 minutes each side. But you can also bake these or add to an air fryer to get nice and crispy. And while they cook prep your lemon pesto garlic aioli for dipping.

How to store:

Once the fritters are done I let them cool completely before transferring to an airtight container and storing in the refrigerator. But these also freeze well, so double the batch and save some for a night you don’t feel like cooking.

Zucchini Fritters

Makes 8 fritters

Ingredients

  • 1 egg
  • 1 1/2 cups zucchini
  • 4 slices cooked bacon
  • 1/3 cup green onions
  • 1/4 cup coconut flour
  • 1/4 tsp sea salt
  • 1/4 tsp pepper
  • 1 Tbsp Italian seasoning
  • 1/4 tsp Garlic powder
  • 1 Tbsp turmeric ghee or any oil you use

Instructions

  • Grate your zucchini, add to a colander, sprinkle sea salt over zucchini and let sit for 10 minutes to draw our water
  • With a mesh bag, towel, or cheese cloth, squeeze out the water
  • Add zucchini to a bowl with the rest of the ingredients (except ghee) and mix
  • Form into 8 patties
  • Warm ghee in large pan
  • Add fritters and cook a few minutes each side
