Spooky Butternut Squash Soup:
This butternut squash soup is perfect for soup season. And we are making it extra festive for spooky season by turning the soup into a spiderweb using yogurt. And pairing it with homemade grilled cheese ghost.
What you’ll need:
- Apple
- Celery
- Butternut squash
- Garlic
- Tomatoes
- Olive oil
- Jalapeño
- Vegetable broth
- Salt and pepper
- Yogurt
- Bread of choice
- Cheese of choice
- Olives
- Butter of choice
How to prepare the butternut squash soup:
This butternut squash soup is the easiest soup to prepare! Preheat oven on 400°F, add chopped butternut squash, celery, tomatoes, apple, garlic, olive oil, salt and pepper to a lined baking sheet. And bake for 40-45 minutes. Once done, carefully transfer it all to a high powered blender, along with 1 1/2 cups warmed vegetable broth. And blend until smooth. But make sure to taste test and adjust seasoning if needed.
How to create the spiderweb look:
And now it is time to play with your food. Add the butternut squash soup to a bowl. And with dairy free yogurt of choice, create the web. And if your yogurt is too thick, you can add a little water to thin it out. I like to add my yogurt to a squeeze bottle. But if you don’t have one, you can add to a zip lock bag, snipping off the corner of the end of bag. Start by making a circle in the center and working your way out. And using a toothpick, spread outwards to create the spider web look. And create a spider using olives.
How to make ghost grilled cheese:
And this butternut squash soup wouldn’t be complete without some fun and festive ghost grilled cheese. Using a ghost cookie cutter, press into bread and cheese slices of choice. And spread some butter on each slice of bread. Place the buttered side down on a pan on medium heat, add the cheese slice, and place the other slice of bread, buttered side up. And cook a few minutes on each side. Once done, add olives for the ghost eyes.

Ingredients
Soup:
- 1 1/2 cups Butternut squash
- 1/2 large apple roughly chopped
- 3 celery stalks roughly chopped
- 3 large garlic cloves
- 3 medium tomatoes
- 2-3 Tbsp olive oil
- Salt + pepper to taste
- 1 small jalapeño deseeded
- 1 1/2 cups vegetable broth
- Dairy free yogurt
Grilled cheese ghost:
- Ghee or dairy free butter
- Raw cheddar cheese or dairy free cheese of choice
- Olives
- Grain free gluten free bread
Instructions
Instructions for soup:
- Preheat oven to 400 F
- Add chopped butternut squash, celery, tomatoes, apple, garlic, olive oil, salt and pepper to a lined baking sheet
- Bake for 40-45 minutes
- Carefully transfer it all to a high powdered blender along with 1 1/2 cups warmed vegetable broth
- Blend until smooth and adjust seasoning if needed
- Add to a bowl and with dairy free yogurt create the web by making a circle in the center and working your way out. Using a toothpick, spread outwards to create the spider web look. Add an olive for the spider
Instructions for grilled cheese:
- Using a ghost cookie cutter cut out your ghost on bread and cheese
- Butter one side of the bread
- Add buttered side down in pan on medium high heat, place cheese on, and place second slice of bread with buttered side facing up
- Cook until nice and golden brown and place olives on top for the eyes
