Monday Lunch or Dinner option:

One pan Whole30 approved Paella

This meal only requires 15 minutes to make, one pan, easy clean up, and is super delicious. If you aren’t doing a Whole30 substitute the cauliflower rice for regular rice. This meal made enough for three servings.

Tuesday Lunch or dinner option:

Roasted tomato and Jalapeno soup

If you are looking for a hearty, nourishing, cozy plant based tomato soup, look no further. This roasted blender tomato and jalapeño soup is one of my favorite way’s to make my tomato soup. I switched it up this time and added some Maple sea salt pumpkin seeds on top with fresh cilantro. This makes 3-4 servings.

Wednesday Lunch or dinner option:

Stuffed bell pepper soup

Our weather has been gloomy and kind of chilly so instead of doing my typical stuffed peppers, I turned it into a nice and cozy soup. This soup can be prepared in under 30 minutes and has so much flavor. This makes 3-4 servings.

Thursday lunch or dinner option:

One pan Kielbasa and cabbage dish

If you love bratwurst you are going to love this spin with my one pan kielbasa and cabbage dish. It is super easy to prep and the leftovers taste extra delicious. This will make 3-4 servings.

Grab and go breakfast idea for the week:

Grain free carrot cake muffins

One of my favorite grab and go breakfast’s includes muffins. These are extra spectacular they are grain, dairy free, and have the most delicious candied pecan crumble. These will easily become your new favorite breakfast. They freeze well, so if you don’t want the whole batch for the week, freeze half for another week.
