This weeks meal prep line up:

This weeks meal prep lineup is going to be extra delicious and I can’t wait to eat it all. I did a questionnaire over on my Instagram stories on what you were interested in seeing more of during my meal prep Sunday series. And the consensus voted more instant pot recipes. And so this week I am bringing you a few batch cooked instant pot recipes along with other goodies.

Comfort food made with a healthier spin:

  1. Instant Pot Cauliflower Soup
  2. Instant Pot Paleo Chili
  3. Mexican Cauliflower Rice
  4. Tomatillo cashew flour enchiladas
  5. Chocolate Chip Peanut Butter Oatmeal Pancakes
  6. No Sugar Added Strawberry Shortcake Baked Oats

Prep once. Eat healthy all week.

Game plan:

I always have a game plan before starting my meal preps. This allows me to figure out how I am going to make the most out of the few hours I allot. The key is multi-tasking and utilizing all kitchen gadgets at once.

How I get it all done in a few hours:

Step 1:

I first start by preparing my cookie dough batter since those have to sit in refrigerator for 30 minutes. Then I move on to prepping my no sugar added strawberry shortcake baked oats and bake. Next, I move on to preparing the instant pot tomatillo chicken. While those three things are cooking/baking I wash and put away the dishes I used for those meals.

Step 2:

Once the baked oats are done cooking I then bake my cookies. Once the tomatillo chicken is done, I prep the enchiladas, and bake once the cookies are done baking. I then wash my instant pot so that I can use for my next meal.

Step 3:

Next, I prepare the instant pot cauliflower soup. And once my enchiladas are done baking I will bake my bacon for the garnish to my soup.

Step 4:

Lastly, once the cauliflower soup is done cooking in the instant pot I remove, place in a Tupperware and wash my pot. I prepare the instant pot paleo chili and wash all the dishes while its cooking.
