Grain Free Chocolate Zucchini Muffins:

I had a bunch of zucchini’s that were about on there way out, so I thought I would utilize them and bake some muffins. Because I am all about not wasting any food in my kitchen. I decided to go with chocolate muffins and extra extra chocolate chip, because who doesn’t love chocolate?

What you will need:

  1. Zucchini
  2. Ripe bananas
  3. Eggs
  4. Coconut oil
  5. Philosophie Cacao Magic (sub cacao)
  6. Optional: Flaxseed meal
  7. Maple syrup
  8. Vanilla extract
  9. Baking soda
  10. Baking powder
  11. Cinnamon
  12. Chocolate chips

First step to making the muffins:

These muffins are super easy to prepare, but this first step you want to make sure you don’t skip. Because you will end up with extra wet and soggy muffins. You want to dice your zucchini, add some sea salt and draw out the moisture from the zucchini for about 15 minutes. And once it is done sitting for 15 minutes take a mesh cheese cloth or mylk bag and squeeze out all the water from the zucchini.

Next steps to making the muffins:

After you have squeezed out all the liquid from the zucchini add wet ingredients to a bowl and mix. Then add in the dry ingredients and mix. Lastly, fold in the zucchini and the chocolate chips and add to lined muffin tins. I did about 1/4 cup of the batter for each muffin. And then you are going to bake 350 F for 20-25 minutes or until a toothpick comes out clean.

Makes 12

Ingredients

  • 2 ripe bananas
  • 3 eggs
  • 1/4 cup melted coconut oil
  • 1 cup diced zucchini
  • 2 cups almond flour
  • 1/3 cup Philosophie Cacao Magic Sub cacao
  • 2 Tbsp flaxseed meal optional
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 1 1/2 tsp cinnamon
  • 1/2 cup mini chocolate chips + more for topping

Instructions

  • Add two zucchinis to food processor and pulse a couple times to dice (you can chop by hand too)
  • Add diced zucchini to a colander add a pinch of salt and let it sit for 10 minutes
  • Add zucchini to a cheese cloth or a nut mylk bag and squeeze out all the liquid from the zucchini
  • Add wet ingredients to blender and blend
  • Add in dry ingredients and blend
  • Fold in chocolate chips, zucchini, and mix
  • Pour in a lined muffin tins, and top with more chocolate chips
  • Bake 350 for 20-25 minutes (Baking time may vary depending on oven, once toothpick comes out clean you are good)
