Peanut Butter Bars:

I was in the mood for some peanut butter cookies, but I thought I would elevate the ordinary peanut butter cookie, and create a bar form. I don’t know about you, but I find eating desserts in bar form, are way better than cookie form. Who agrees with me? If you have 20 minutes to spare tonight I definitely recommend you whip up a batch of these bad boys. You will not be disappointed I promise!

Free of the following:

  2. Dairy free
  3. Refined sugar free
  4. Easy to prepare
  5. Customizable to your dietary restrictions

What you will need for these bars include:

  1. Peanut butter (sub any nut/seed butter)
  2. Primal Palate maple sugar (substitute coconut sugar)
  3. Pasture raised eggs (substitute flax eggs)
  4. Vanilla extract
  5. Baking soda
  6. Almond flour
  7. Coconut oil
  8. Raw unsweetened coconut shreds (optional)
  9. Cinnamon
  10. Hu Kitchen Earl Grey Chocolate bar (substitute your favorite chocolate bar)
  11. Celtic sea salt

How to prepare:

I add the wet ingredients to a bowl and with a handheld mixer, mix. Then add in the dry ingredients and mix. Fold in one chopped chocolate bar into batter. Add to a lined 8×8 baking dish, spread batter with a spatula, top with more chocolate chunks, and celtic sea salt. Bake 350 F for 15-20 minutes or until a toothpick comes out clean. I like mine extra gooey so I cooked mine 350 F for 15 minutes in my convection oven. Let cool for ten minutes and then slice into 16 bars.

Storing:

For storing these peanut butter bars, I prefer keeping mine in an airtight container in the refrigerator and reheat for a couple minutes when I want to enjoy. But these also freeze well, so add half the batch to an airtight container and store in the freezer for another day.

Earl Grey Chocolate Chunk Peanut Butter Bars

Makes 16 squares

Ingredients

  • 2 pasture raised eggs sub flax eggs
  • 1/2 cup creamy peanut butter
  • 1/2 cup Primal Palate maple sugar sub coconut sugar
  • 2 tsp Primal Palate vanilla extract
  • 1 tsp baking soda
  • 1 cup almond flour
  • 1/4 cup melted coconut oil
  • 1/2 cup unsweetened shredded coconut optional
  • 1 tsp cinnamon
  • 1 1/2 Hu Kitchen earl grey chocolate bar chopped sub your favorite chocolate bar
  • 1/2 tsp celtic sea salt

Instructions

  • Mix wet ingredients
  • Add dry ingredients and mix
  • Fold in chopped chocolate
  • Add to a lined 8x8 baking dish
  • Top with more chocolate chunks and sea salt
  • Bake 350 F for 15-20 minutes or until toothpick comes out clean (I did 15 in my convection oven because i like them gooey)
