Where are all my sweet and salty lovers at?!? You are going to want to try these banana cashew butter blondies ASAP. They have just the right amount of sweetness to them, are super fluffy, and moist. I mixed it up and added in a ripe banana which just made these extra delicious. I like to meal prep at least one dessert for the week, because yes I have to have some sort of dessert everyday, don’t judge! These freeze well too, so if you are the only one eating them in your household, save half the batch in the freezer.

Here is what you will need:

  1. Georgia Grinders Cashew butter
  2. Pasture raised eggs
  3. Almond flour
  4. Ripe banana
  5. Vanilla extract
  6. Primal Palate maple sugar (sub coconut sugar or any sugar you use)
  7. Baking soda
  8. Melted coconut oil
  9. 1 bar of dark chocolate chopped up
  10. Celtic sea salt

You are going to mix the wet ingredients first with a hand held mixture or by hand. Then add in the dried ingredients and mix. Fold in the chopped chocolate bar, add to a lined 8×8 baking dish, top with more chocolate and celtic sea salt. Bake 350F for 20-25 minutes or until a toothpick comes out clean. Let cool completely before slicing into squares.

Banana cashew butter blondies

Ingredients

  • 3/4 cup cashew butter
  • 2 eggs
  • 1 cup almond flour
  • 1 ripe banana
  • 2 tsp Vanilla
  • 1/2 cup Maple sugar sub maple syrup or coconut sugar
  • 1 tsp baking soda
  • 1/3 cup coconut oil melted and cooled
  • One bar of chocolate of choice chopped up
  • 1 tsp celtic sea salt

Instructions

  • smash banana, add eggs, cashew butter, and mix
  • add coconut oil, vanilla extract, and maple sugar and mix
  • Add maple sugar, baking soda, and almond flour and mix
  • fold in chopped chocolate
  • add to a lined 8x8 baking dish and sprinkle celtic salt on top
  • bake 350 for 20-25 minutes
