Cucumber salad:

The perfect side dish is this cucumber salad. Because it is super easy to prepare, it can be meal prepped in advance, and pairs nicely with a variety of meals for the week. I like to serve this with my air fried lamb meatballs and make delicious at home Mediterranean bowls.

Ingredients you will need:

  1. Persian cucumbers
  2. Cherry tomatoes
  3. Red onion
  4. Olive oil
  5. Red wine vinegar
  6. Salt and pepper to taste
  7. Olives
  8. Juice of lemons

How to prepare:

This salad is super simple to prepare. I first start by chopping my cucumbers, cherry tomatoes, and slicing my onion. And then I add it all to a medium size bowl along with the rest of the ingredients. I mix and like to store mine at room temperature over night to let marinate. But you can also just stick in the refrigerator too.

What to serve this with:

This cucumber salad can be enjoyed by itself as a salad or paired with protein of your choice. But I personally find it pairs best with lamb meatballs. Because there is something about this combo that just gets my taste buds dancing.

How to store:

I like to store in an airtight container in the refrigerator after it has marinated overnight. But don’t worry if the olive oil clumps up while in the refrigerator, that is normal. But try mixing it up and letting sit at room temperature to help it loosen up.

 

Cucumber Salad

Ingredients

  • 3 Persian cucumbers chopped
  • 3/4 cup of chopped cherry tomatoes
  • 1 medium red onion thinly sliced
  • 1/3 cup olive oil
  • 1/3 cup red wine vinegar
  • Salt and pepper to taste
  • 1/2 cup olives
  • 2 lemons juiced
  • Salt and pepper to taste

Instructions

  • Chop your cucumbers, cherry tomatoes, and onion
  • Add to a medium size bowl along with the rest of the ingredients and mix
  • I like to store at room temperature over night to allow to marinate
  • In morning transfer to refrigerator and enjoy chilled
