Cilantro Greek Hummus:
One of our favorite appetizers is hummus. And this cilantro greek hummus is a must make ASAP. It is a great prep ahead option and pairs great with a variety of meals for the week.
Ingredients you will need for hummus:
- Salt and pepper
- Olive Oil
- Lemon juice
- Lime juice
- Persian cucumbers
- Red onion
- Cherry tomatoes
- Kalmata olives
- Feta cheese
How to prepare the hummus:
First, rinse and drain the chickpeas and add to a food processor. And add the rest of the ingredients to the food processor for the hummus and process until you get a smooth, creamy consistency.
Plating the hummus:
Add the hummus to a bowl and create a little hole in the middle to fit the topping. Add the chopped onions, Persian cucumbers, chopped olives, feta cheese, cilantro, and cherry tomatoes to the top of the hummus.
What do I enjoy it with?
Enjoy the hummus with pita chips, pita bread, flat bread, crackers, or vegetables.
Can I meal prep in advance?
Yes, this is a great prep ahead dish. But if making it ahead of time, I suggest keeping the topping separate and adding the day you plan on enjoying. Because this will help prevent the veggies from getting soft or soggy.
How do I store it?
Store it in an airtight container and enjoy within 3-4 days of making.

- 1 15 oz can chickpeas drained and rinsed
- 1/2 tsp cumin
- 1/4 tsp salt
- 1/4 tsp pepper
- 3 Tbsp tahini
- 1 lemon juiced
