These caramel apple mummy pops are perfect for spooky season. And are made with the best homemade date caramel that will leave you hooked.
What you’ll need:
- Apple slices
- Popsicle sticks
- White chocolate chips or white candy melts
- Homemade vegan date caramel
- Refined coconut oil
- Candy Eyes
How to prepare the apple slices:
One of the frequently asked questions I get whenever I make these caramel apple pops is, “how do you prevent the apple slices from turning brown?” And I have to say it is by soaking them in water with some salt. And no they don’t taste like salt afterwards. Slice your apples into 1 inch thick slices. And soak in 2 cups room temperature water and 1 tsp salt for 10 minutes. And then drain, rinse very well, and pat dry. But make sure they are really dried or else your date caramel will have a hard time sticking to the apples.
Make the homemade date caramel:
I have been making this vegan date caramel for many years now. Because it is seriously the best! And I love that it does not get stuck in your teeth like traditional caramel does. Just add all the ingredients to a food processor and process until you get a smooth and creamy consistency.
Making the mummy pops:
And once you have the caramel prepped. Melt your white chocolate chips with some coconut oil. But be sure to not overheat your chocolate. Because that is what causes your chocolate to harden quickly. Stick a popsicle stick into the apple slice, dip in date caramel, and then into the melted white chocolate. And place on a dish lined with parchment paper. Refrigerate until the chocolate has hardened. And add some melted chocolate to the back of the candy eyes and place onto the apple pops. And drizzle the top with extra melted white chocolate. Refrigerate until the chocolate is set.
How do I keep stored?
You can keep stored in the refrigerator or even freezer in an airtight container. But best to be eaten within 1-2 days if storing in the refrigerator.

Caramel Apple Mummy Pops:
- 2 small apples
- Homemade date caramel see below
- 1 cup white chocolate chips
- 1 tsp refined organic coconut oil
- Candy eyes
Vegan Date Caramel
- 1 cup soaked medjool dates pits removed
- 1/2 cup cashew butter
- 1/4 cup melted organic refined oil
- 1/4 tsp salt
- 1 tsp vanilla extract
- Optional: 2-3 Tbsp maple syrup
Instructions
Instructions for date caramel:
- Soak your dates in hot water for 30 minutes. Drain reserving the date water.
- Add everything to food processor
- Process for 1 minute or until you reach your desired consistency. For thinner consistency add some of the reserved date water.

- Slice your apples into 1 inch thick rounds. Soak in 2 cups room temperature water and 1 tsp salt for 10 minutes. Drain, rinse, and pat dry. This helps prevent the apples from turning brown.
- Stick popsicle stick in apple slices
- Dip in date caramel (you can freeze until the caramel has firmed up a bit) I didn’t do this step
- Melt white chocolate with 1 tsp coconut oil for 20 second intervals until melted (stirring each interval) do not over heat!
- Dip your caramel apple pops in white chocolate and place on lined baking dish with parchment paper. And freeze until the chocolate is set.
- Add two dots of white chocolate and place candy eyes. Then drizzle white chocolate all over to create the mummy look. And freeze until chocolate is hardened, and enjoy!
