Soak your dates in hot water for 30 minutes. Drain reserving the date water.
Add everything to food processor
Process for 1 minute or until you reach your desired consistency. For thinner consistency add some of the reserved date water.
Instructions for caramel apple mummy pops:
Slice your apples into 1 inch thick rounds. Soak in 2 cups room temperature water and 1 tsp salt for 10 minutes. Drain, rinse, and pat dry. This helps prevent the apples from turning brown.
Stick popsicle stick in apple slices
Dip in date caramel (you can freeze until the caramel has firmed up a bit) I didn’t do this step
Melt white chocolate with 1 tsp coconut oil for 20 second intervals until melted (stirring each interval) do not over heat!
Dip your caramel apple pops in white chocolate and place on lined baking dish with parchment paper. And freeze until the chocolate is set.
Add two dots of white chocolate and place candy eyes. Then drizzle white chocolate all over to create the mummy look. And freeze until chocolate is hardened, and enjoy!
