Banana bread:

Todd request “regular” banana bread for this week. And so I attempted a banana bread based off what I thought he meant by “regular.” And the verdict was he loved it and I hope you all love it too. 

Ingredients I used:

  1. Pasture raised eggs
  2. Ripe bananas
  3. Vanilla bean ghee or butter
  4. Vanilla extract
  5. Milk
  6. Maple sugar or any type of sugar you use
  7. All purpose or whole wheat flour
  8. Baking soda
  9. Salt
  10. Optional add ins: mini chocolate chips or chopped nuts

How to prepare batter:

With a handheld mixer, I add my eggs and sugar, and mixed until incorporated. And then I added in the ripe bananas, melted and cooled vanilla bean ghee (or butter if choosing to use), vanilla extract, milk, and mixed. And then I added in the dry ingredients and mixed. I used mini chocolate chips in mine and folded in 1/2 cup. Added the batter to a lined loaf pan, topped with more chocolate chips, and baked 350 F for 45-50 minutes or until a toothpick comes out clean.

Cooling and storing method:

I like to let my bread cool completely before slicing into thick slices. And then I store in an airtight container in the refrigerator. But if you don’t feel like eating it all at once, freeze individual slices for a morning you need a quick breakfast and don’t have anything prepped.

Enjoy with homemade mylk:

I enjoyed mine with some homemade Almond Mylk but it also pairs perfectly with a homemade latte too.

Ingredients

  • 2 large pasture raised eggs
  • 3 ripe bananas
  • 8 Tbsp vanilla bean ghee or butter melted
  • 1 tsp vanilla extract
  • 1/4 cup milk
  • 1 cup maple sugar substitute any type of sugar you use
  • 2 cups all purpose flour or whole wheat flour
  • 1 tsp baking soda
  • 1/4 tsp salt
  • Optional add ins:
  • 1/2 cup mini chocolate chips + 2 Tbsp for topping
  • 1/2 cup chopped nuts of choice

Instructions

Instructions:

  • Add eggs and sugar to a bowl and mix with a hand held mixer or spoon
  • Add in the mashed bananas, melted ghee/butter, vanilla extract, milk, and mix
  • Add in the flour, baking soda, salt, and mix until incorporated
  • Fold in the mini chocolate chips or nuts if using
  • Add batter to an 8x5” x 4x5” lined loaf pan, top with more chocolate chips or nuts if using, and bake 350 F for 45-50 minutes or until a toothpick comes out clean
  • Let rest completely before slicing
  • I store in an airtight container in the refrigerator
