Banana bread with candied pecan crumble:

Now you all know I love my banana bread for an item to meal prep for a quick grab and go breakfast during my busy mornings. I like to mix up the flavors so that I keep things exciting and this banana bread with a candied pecan crumble is currently my newest addiction.

For the banana bread this is what you will need:

  1. Ripe Bananas
  2. Almond flour
  3. Coconut flour
  4. Pasture raised eggs
  5. Coconut oil
  6. Flaxseed meal (optional)
  7. Maple syrup
  8. Vanilla Extract
  9. Baking soda
  10. Baking powder
  11. Cinnamon
  12. Nutmeg

How to prepare:

I like to add all my ingredients to my high powered blender and blend on low to mix the batter. If you don’t want to do it this way, you can mix with a spoon, or a handheld mixer. Once you have everything mixed you are going to add batter to a lined loaf pan (1 1/2 lb. loaf pan). I like to line mine with parchment paper when baking. But please note: I have not tried any substitutes for the flours.

Prepare the crumble:

Next I prepare my candied pecan crumble. I like to make my candied pecans from scratch, but if you don’t want to do that you can purchase them at the store. Here is the recipe in case you want to try your hand at making them yourself (I swear they are super super easy).

For the candied pecan crumble here is what you’ll need:

  1. Candied pecans
  2. Fourth and Heart vanilla madagascar ghee (sub coconut oil or butter)
  3. Almond flour
  4. Sea salt
  5. Vanilla Extract

Add everything to a food processor and pulse a couple times. You want it to resemble salt like consistency but sticky to the touch. Then add to the top of the banana bread batter, add to oven preheated at 350 F and bake 35-40 minutes or until a toothpick comes out clean.

Ingredients

Banana Bread

  • 2 ripe bananas
  • 3 eggs
  • 1/4 cup melted coconut oil
  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 2 Tbsp flaxseed meal optional
  • 1/4 cup maple syrup
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp nutmeg

Topping:

  • 1 cup candied pecans sub 1 cup raw pecans and 2 Tbsp maple syrup
  • 1/4 cup almond flour
  • 1/4 cup coconut oil
  • Pinch sea salt
  • 1 tsp vanilla extract

Candied pecans

  • 1 cup pecans
  • 2 Tbsp maple syrup
  • 1 Tbsp @primalpalate cinnamon sugar cookie

Instructions

  • Mix wet Ingredients and then add in dry ingredients and mix
  • Add batter to a lined loaf pan, and top with crumble topping
  • Bake 350 for 35-40 minutes (I baked mine in convection oven for 35 minutes).
  • Drizzle raw coconut butter on top
  • Store in an airtight container
