5 Ingredient Cashew Butter Cookies

I am a sucker for the classic soft and chewy peanut butter cookies. But I wanted to mix it up and make some cashew butter soft and chewy cookies dipped in melted chocolate. These cashew butter cookies only require 5 ingredients and are done in just 10 minutes.

Ingredients you will need for the cookies:

  1. Cashew butter
  2. 1 pasture raised egg
  3. Maple sugar, coconut sugar, monk fruit sweetener, stevia (whatever sugar you prefer)

Ingredients you will need for chocolate:

  1. Chocolate chips of your liking (I used these)
  2. Coconut oil

How to make the cookies:

You are going to add the cashew butter, egg, and sugar to a bowl. With a handheld mixer, mix until your batter forms. Then you are going to roll into 12 small-medium sized balls, add to a lined baking sheet, and with a fork press down gently in both directions. Bake on 350F for about 8-10 minute, cooking time me vary, so keep an eye on them.

Dipping in chocolate:

Once your cookies have cooled, you are going to melt your chocolate. Take your chocolate chips, coconut oil, and add to a small sauce pan. Heat on low, stirring throughout until the chocolate is melted. Carefully take your cookies and dip half of it into the chocolate mixture and top with crushed cashews. And then be sure to not eat the whole batch in one sitting.

Cashew Butter Cookies

Makes 12 cookies

Ingredients

  • 1 cup cashew butter
  • 1 egg
  • 1/2 cup coconut sugar
  • 1/2 cup chocolate chips
  • 1 tsp coconut oil

Instructions

  • Mix your cashew butter, egg, and sugar
  • Form into balls
  • Gently flatten with a fork
  • Bake 350 for 8-10 minutes
  • Let cookies cool
  • Melt chocolate chips with coconut oil over stove top until melted
  • Dip half of the cookie into the chocolate
  • Top with chopped cashews
