My friend brought me back the freshest macadamia nuts from Hawaii, so you know I had to get in the kitchen and bake something delicious for us. So here are the fluffiest, tastiest, and easy chocolate chip macadamia nut cookies. Not only are they delicious but they are loaded with super foods such as cacao, reishi, and maca thanks to Philosophie cacao magic used in these.

These are very simple to prepare:

  1. Step 1: Mix your wet ingredients with a handheld mixer
  2. Step 2: Mix in your dry ingredients with the wet ingredients and mix
  3. Step 3: Fold in chopped macadamia nuts and mini chocolate chips
  4. Step 4: Top with more chocolate chips and macadamia nuts on top, bake 350 for 12-14 minutes. Do less time if you like them more fudgy (around 10 minutes)
  5. Step 5: Store in an airtight container for 3-4 day’s (if they last that long)

Also, for the perfect summertime treat, they make for the perfect ice cream sandwiches. Just grab a tub of your favorite dairy free ice cream or gelato ( I used O’MY  Vanilla bean Gelato), two cookies, sandwiched them up, and devour. I like to individually wrap mine and store in freezer, for when the cravings hit.

Ingredients

  • 2 pasture raised eggs
  • 1 tsp vanilla extract
  • 1/4 cup coconut oil
  • 1/2 cup unsweetened almond milk
  • 1/2 cup Primal Palate maple sugar sub coconut sugar
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 2 cups almond flour
  • 1/2 tsp cinnamon
  • 1/2 tsp Celtic sea salt
  • 1/2 cup philosophie cacao magic sub cacao powder
  • 1/2 cup mini chocolate chips
  • 1 cup chopped macadamia nuts

Instructions

  • Mix wet ingredients with a hand held mixer
  • Add the dry ingredients and mix
  • Fold in chocolate chips and macadamia nuts
  • Bake 350 12-14 minutes
