Spaghetti Squash Bolognese:

This spaghetti squash bolognese is 100% comfort food made with a healthy twist. Now I have nothing with pasta but from time to time I do crave spaghetti squash as my alternative to pasta. Because sometimes having pasta leaves me feeling bloated and extra full. This meal is perfect for anyone who meal preps because it can be prepped in advanced and taste great reheated, or even cold.

Ingredients you will need:

  1. Spaghetti squash
  2. Meat of choosing (I used Buy Ranch Direct ground bison)
  3. Meat and potato seasoning
  4. Primal Kitchen Foods roasted garlic marinara sauce (use whatever pasta sauce you like)
  5. Onions
  6. Cilantro
  7. Garlic Ghee or avocado oil
  8. Optional add in: parmesan cheese (leave out if doing Whole30)

Preparing spaghetti squash:

I like to steam my spaghetti squash whole in the instant pot. No more wrestling with the squash and knife in attempt to cut it. I know you all know the struggle. I make slashes throughout the entire squash, place the trivet that comes with the instant pot, along with 1 cup water, and add the squash. And then I set it to the steam function for 10-15 minutes, it will depend on how big your squash is.

How do you make the spaghetti squash into pasta?

Once it is done cooking, release the pressure, and carefully transfer it to a cutting board. Once it has cooled a bit, slice in half, with a spoon remove the seeds. If it is still too al dente, add it back into the instant pot, and steam for another 5 minutes. Then take a fork and run your fork through to create the “pasta” like noodles.

Preparing the bolognese sauce:

While I have the squash steaming I am preparing the bolognese sauce. I first add the diced onions with the ghee to a large pan and sauté for 5 minutes. Then add in the ground meat, seasoning, cilantro, and cook for 5 minutes or until the meat is no longer pink. Lastly, add the tomato sauce and mix.

Putting it all together:

Once the meat sauce is done, add in the spaghetti squash “pasta,” and mix. Optional topping some fresh parmesan cheese.

Spaghetti Squash Bolognese

Ingredients

Bolognese

  • 1 lb Buy Ranch Direct ground bison Sub any meat you'd like or use mushrooms for a plant based version
  • 1 Tbsp Primal Palate Meat and Potato seasoning
  • 1/3 cup diced onions
  • 1 Tbsp California garlic ghee Sub avocado oil
  • 2 Tbsp chopped cilantro
  • 1/2-1 cup Primal Kitchen Foods Roasted Garlic Marinara sauce Sub any pasta sauce you enjoy
  • Optional: 1/4 cup parmesan cheese Omit if doing Whole30

Instant Pot Spaghetti Squash

  • 1 cup water
  • Spaghetti squash

Instructions

Bolognese

  • Add your ghee to pan and warm
  • Add in your diced onions and sauté for 5 minutes
  • Add in your ground bison, seasoning, and cilantro, and cook for 5-7 minutes
  • While cooking prepare your steamed spaghetti squash
  • Add cooked spaghetti squash to pan with the meat, add tomato sauce, mix, and cook for a couple minutes
  • Top with parmesan cheese

Instant Pot Spaghetti Squash

  • Add your water to instant pot
  • Add your trivet
  • Pierce your spaghetti squash all over with a knife
  • Add spaghetti squash to instant pot
  • Close, seal valve, set to steam for 10-15 minutes
  • Release pressure and carefully remove from instant pot
  • Cut in half, with a fork create “pasta”
  • If it is still too al dente for your liking add back to instant pot and steam another 5 minutes
