Pesto scallops
Ingredients
Dairy free hemp seed spinach cilantro pesto
- 1 cup basil
 - Handful of cilantro
 - Handful of spinach
 - 2 garlic cloves
 - 1/4 cup hemp seeds
 - 1/4 cup olive oil
 - 1/2 cup pine nuts
 - 1 lemon juiced
 - Pinch of Celtic sea salt
 
Scallops
- 6-8 wild caught scallops
 - 1 tbsp fourth and heart California garlic ghee
 - Salt + pepper

- Pulse everything for pesto in food processor and set aside
 - Heat your ghee in a cast iron skillet and get nice and hot
 - Add your scallops seasoned with salt + pepper
 - Add to pan and cook a few minutes not moving them during this time
