This one pan pesto shrimp zoodle pasta dish is super fresh, simple to make, and takes less than 15 minutes to prepare. It is the perfect weeknight meal to add to your rotation if you are like me and need quick meals after a long day at work. First things first you want to prepare your pesto. I like to prepare mine on my meal prep Sunday so that I have it ready to go and can add to a variety of dishes throughout the week. It is a good staple to have in your refrigerator at all times, because it pretty much goes with everything.

For the pesto you will need:

  1. Cilantro
  2. Spinach
  3. Basil
  4. Garlic
  5. Lemon juice
  6. Celtic sea salt
  7. Hemp seeds
  8. Olive oil
  9. Pine nuts

You are going to add all the ingredients to a food processor or a high powdered blender and blend up. I like to keep mine thick but if you like the thinner consistency you simply will add in more olive oil as you are blending it up.

Once you are done preparing your pesto you want to prepare the rest of the ingredients for your pasta dish.

  1. Spiralize 4 zucchini’s ( click here to snag the spiralizer I use)
  2. Clean your wild caught shrimp, pat dry, add salt and pepper to shrimp
  3. Grab your Fourth and Heart California ghee or any oil you typically use

Heat your pan with the ghee, you want to get it nice and hot but not smoking. Add your shrimps to the pan and cook a couple minutes, then add in your zoodles, and about 1/2-1 cup of the pesto, and mix. Cook for a few minutes and top with fresh cilantro. It doesn’t get easier than that my friends.

Ingredients

  • 10-12 wild caught shrimp
  • 4 zucchini’s spiralized
  • 1/2 cup pesto see recipe below
  • Salt and pepper
  • 1 tbsp fourth and heart cauliflower garlic ghee
  • Optional: 1/2 tsp red chili flakes

Dairy free hemp seed spinach cilantro pesto

  • 1 cup basil
  • Handful of cilantro
  • Handful of spinach
  • 2 garlic cloves
  • 1/4 cup hemp seeds
  • 1/4 cup olive oil
  • 1/2 cup pine nuts
  • 1 lemon juiced
  • Pinch of Celtic sea salt

Instructions

  • Prepare your pesto by adding all ingredients to your food processor and processing for 15-30 seconds
  • Heat your ghee in a large pan
  • Add your shrimp with salt and pepper and cook a couple minutes
  • Add In zoodles, 1/2 cup of pesto, mix, and cook for a few minutes
  • Add chili flakes and fresh cilantro
