This week is going to be LIT with all of my favorite meals prepped for the busy week ahead of me. Since it is Memorial Day weekend I thought it was only fitting to create a couple summer staples along with some of my favorite meals to batch cook. If you aren’t familiar with batch cooking, it is simply prepping actual meals/recipes so that the meals are already set for the week. I love batch cooking because it saves me money, means I get to cook less often, saves me time and energy, and it allows me to freeze some meals for another week I don’t feel like cooking.
Whats on the menu for this week includes:
- Wild caught cod ceviche
- White rice cooked with bone broth (cooked according to package but added bone broth in place of water)
- Air fried plantain chips
- Instant pot orange chicken
- Instant pot cauliflower mash
- Instant pot beef stew
- Roasted Broccoli (added avocado oil spray, salt and pepper, and baked 400 F for 20-25 minutes)
- Air fried chicken nuggets
- Chocolate macadamia nut cookies
Wild caught cod ceviche is a staple during the summer time for us. Make enough so that you can enjoy for a couple days. We like pairing ours with some homemade air fried plantains but you can use whatever chips you enjoy too. When meal prepping this once you have let the fish sit in the lime juice for up to 8 hours be sure to drain the juice and store in the refrigerator for up to two days.
There is nothing better than some fresh better for you than take out instant pot orange chicken. This meal has easily become a go to for us and it has helped kick Todd’s Panda Express cravings, YAY. I like to infuse my white rice with bone broth by cooking according to package and substituting the water with chicken bone broth. I love using this chicken bone broth.
Comfort food at its finest with this instant pot beef stew, cauliflower mash, and homemade bone broth gravy. The meat turns out super tender that it melts in your mouth and the nice thing about this meal is that it only requires one pot. If you don’t have an instant pot you can also follow the directions and cook in your slow cooker for 8 hours. If you aren’t a fan of cauliflower mash simply substitute some mashed potatoes to complete the meal.
You will never buy fast food chicken nuggets again after trying this version of my air fried chicken nuggets. The nice thing about meal prepping these is you can add to a variety of meals so that left overs aren’t boring and repetitive. I like adding mine to salads, dipping in ketchup as a little appetizer, or having them with roasted veggies and cauliflower mash.
My meal preps are never complete without having some sort of dessert adding to mine because its all about balance and moderation right? I don’t believe in deprivation so you will always see some sort of sweet treat during my weekly meal prep. These are loaded chocolate chip macadamia nut cookies in which I know you all are going to fall in love with.
