Lemon blueberry cardamom poppyseed bread:
One of my favorite desserts is anything that involves LEMON. And because it is officially blueberry season, I had to create one of my favorite bread combinations, lemon blueberry cardamom poppyseed bread. And if you have never tried baking with the spice cardamom, I suggest you start. Because it definitely is an underrated spice and I find it pairs perfectly with this bread.
What you are going to need for this bread:
- Ripe banana
- Pasture raised eggs
- Juice of a lemon + zest
- Maple Syrup
- Almond flour
- Baking soda
- Fourth and Heart Vanilla Madagascar ghee (sub coconut oil)
- Poppy seeds
- Vanilla extract
- Fresh blueberries
But please note, I have not tried any substitutions for this recipe and I wont be able to answer any questions about substitutes, sorry.
How to prepare:
I like to speed up the process and add everything (except blueberries) to my high powered blender. But you could use a handheld mixer or mix in a bowl with a spoon too. And once mixed, I fold in my blueberries, add to a lined loaf pan, and bake 350 for 35-40 minutes or until a toothpick comes out clean.
Meal prep ahead of time:
And this makes for the perfect meal prep option to have it already done and just grab and go in the morning. It also freezes well, so you can freeze 1/2 the loaf for a week you don’t have time to make breakfast. And as far as storing goes, I like to store mine in an airtight container in the refrigerator.
How to enjoy bread:
One of my favorite way’s to have this bread is in a loaded yogurt bowl. I add some coconut yogurt, a tablespoon of cashew butter, fresh strawberries, and a slice of the bread. And another option is, topping with coconut yogurt, drizzle of cashew butter, granola, and strawberry slices. But just eating it by itself with some butter is bomb too.

- 1 ripe banana
- 3 eggs
- 1 cup fresh blueberries
- 1 lemon juiced + zest
- 2 Tbsp maple syrup
- 2 cups almond flour
- 1 tsp baking soda
- 1/4 cup Fourth and Heart Madagascar vanilla ghee sub coconut oil
- 1 1/2 tsp poppy seeds
- 1 tsp vanilla extract
- 1 tsp cardamom
- 1 tsp cinnamon
- Optional add in: 2 scoops @vitalproteins collagen peptides
- Mix everything except the blueberries in a high powered blender.
- Fold in blueberries, and add to a lined loaf pan.
- Bake 350 for 35-40 minutes. I did 38 in my convection oven.
