Lemon Blueberry Cardamom Muffin Tops:

I wanted to make some blueberry scones and then I remember how dry scones on are I instantly said, “yeah no thanks.” So I went to the drawing board and thought, I could attempt a scone like breakfast idea, only skip the dry part. Then these lemon blueberry cardamom muffin tops were born. What I love about these is that they are not too sweet, they go great with a homemade mocha latte, and are a perfect breakfast for on-the-go. They also freeze well, so if you are like me, and are the only one’s eating them in your household, then freeze half the batch for another day. Or eat them all in the week, no judgment over here.

Here is what you are going to need from your pantry and refrigerator:

  1. Almond flour ( I haven’t tried any substitute flours yet)
  2. Baking soda
  3. Cardamom
  4. Cinnamon
  5. Optional Primal Palate Cinnamon Sugar cookie seasoning
  6. Sea salt
  7. Pasture raised eggs
  8. Maple syrup
  9. Zest of a lemon
  10. Lemon juiced
  11. Blueberries

How to prepare:

Simply mix the wet ingredients first, add in the dry ingredients, and mix. Fold in the fresh blueberries, scoop out about 1/4 cup of the batter, and add to a lined baking sheet. Flatten gently with the palms of your hands (not too much you want them to be thick pillow’s of deliciousness). Optional, top with cinnamon sugar cookie seasoning (sub coconut sugar and cinnamon). Bake 350 F for 18-20 minutes. I like to also drizzle some Manuka honey once they are done baking.

Makes 12

Ingredients

  • 3 cups almond flour
  • 1 tsp baking soda
  • 2 pasture raised eggs
  • 1/4 cup maple syrup
  • 1 cup blueberries
  • Zest of a lemon
  • Juice of a lemon
  • Pinch of sea salt
  • 1 tsp cardamom
  • 1 tsp cinnamon
  • 1/2 tsp cinnamon sugar cookie seasoning optional for on top

Instructions

  • Mix dry ingredients
  • Mix wet ingredients
  • Combine and mix
  • With an ice cream scooper scoop about 1/4 cup of batter,  add to a lined baking dish, and gently press down with the palm of your hand to flatten.
  • Optional: Sprinkle some cinnamon sugar cookie seasoning on top
  • Bake 350 F for 18-20 minutes
  • Optional: drizzle some manuka honey on top
