Instant Pot Cashew Chicken

As you all know I have been trying to recreate Todd’s favorite take out meals at home with a healthier spin to them. So far he has enjoyed all of the meals I have tried so here is another one being added to the list to see if he will enjoy. This is my easy peasy instant pot cashew chicken that is pretty much fool proof!

What you will need:

  1. 1.5 lbs Buy Ranch Direct chicken chopped into bite size pieces
  2. Coconut aminos
  3. Sesame Oil
  4. Minced garlic
  5. Chili garlic sauce (substitute chili flakes)
  6. Bone Broth (sub water)
  7. Cashews
  8. Broccoli
  9. Red bell peppers
  10. Green Onions
  11. Sesame seeds (I used Everything but the bagel sesame seed seasoning)
  12. Tapioca flour (this is used to thicken up the sauce you can omit or substitute arrowroot)

If you don’t have an instant pot try cooking in:

  1. In your slow cooker: follow the directions below and cook for about 6-8 hours in your slow cooker
  2. In a large pan over stove top: follow the directions below (minus the instant pot directions), you will cook your chicken in pan for 5-7 minutes, then add the veggies, broth, and cover your pan. You may need to add in less bone broth, if it has too much liquid just bring to high heat and cook until the liquid is absorbed.

Instant Pot Cashew Chicken

Ingredients

  • 1.5 lbs. chopped chicken
  • 2 Tbsp tapioca flour
  • 2 tbsp avocado oil
  • 1/2 cup coconut aminos
  • 2 tsp minced garlic
  • 1 1/2 tsp sesame oil
  • 1 tsp chili garlic sauce sub red chili flakes
  • 1 cup chicken bone broth sub water
  • 1/2 cup cashews
  • 2 cups broccoli
  • 2 red bell peppers sliced
  • 2 Tbsp Green onions

Instructions

  • Set instant pot to sauté function and add avocado oil
  • Coat your chicken with tapioca flour and season with salt and pepper
  • Add chicken to hot pot and brown a couple minutes each side
  • Add coconut aminos, chili sauce, minced garlic, sesame oil and sauté for a couple minutes
  • Add in bone broth, turn off instant pot, cover, seal valve, set to manual high pressure for 5 minutes
  • Let pressure release on its on (10-12 minutes) open instant pot
  • Add in chopped broccoli, red bell peppers, and set high pressure high manual 2 minutes
  • Quick release of pressure open, add in cashews, top with green onions
