How to make a homemade taco bar:

This is such a fun way to entertain when you have guests, if you have kids, or just want to create a taco bar on a random weeknight. Everything can be meal prepped ahead of time, so if you are entertaining it is less work you will have to do. And you can also make it a nacho bar with all the same ingredients, just add in some chips.

What you will need:

  1. Homemade tomatillo salsa
  2. Cilantro
  3. Guacamole
  4. Jalapeno deseeded
  5. Cherry tomatoes
  6. Limes
  7. Siete Foods grain free taco shells or grain free chips

How to make the tacos:

The assemble of the tacos are simple, toast your taco shells, add your tomatillo chicken, and add the garnish you prefer. It really doesn’t get more simple than this my friends.

Ingredients

Instant pot shredded tomatillo salsa chicken

  • 2 chicken breast
  • 1/2 cup tomatillo salsa
  • 1/2 cup bone broth
  • Salt and pepper to taste

Tomatillo salsa

  • 10-12 to matillos
  • 1 jalapeno deseeded
  • 1/2 yellow onion
  • 4-6 garlic cloves
  • 2 Tbsp avocado oil
  • Salt and pepper to taste
  • Handful of cilantro

Instructions

Instant pot shredded tomatillo salsa chicken

  • Add chicken, salsa, bone broth, salt and pepper to instant pot
  • Close, seal valve, set to poultry for 5 minutes
  • Let pressure release naturally (10-12 minutes)
  • Shred chicken

Tomatillo salsa

  • Add tomatillos, roughly chopped onions, whole garlic cloves, roughly chopped jalapeño, avocado oil, salt and pepper to a baking sheet lined with parchment paper
  • Bake 400 F for 20-25 minutes and broil for a few minutes after done
  • Carefully transfer to blender along with cilantro and blend
  • Optional add in: 1/4-1/2 cup bone broth, water, or vegetable broth to thin out the salsa
