Linguine and Clams:

I wanted to make my own rendition of linguine and clams in honor of my dad’s anniversary. He always made the best linguine and clams and it seriously was one of my favorites. I wish I would have payed more attention to how he made his but I figured I would make my own version and I think it was pretty close to the way he made his.

Ingredients used to make:

  1. Wild caught clams with salt drained
  2. Clam juice (you can buy separate clam juice or just use the juice when you drain your clams from can)
  3. Garlic ghee or substitute avocado oil/olive oil with 1-2 tsp minced garlic
  4. Cracked pepper
  5. Dried oregano
  6. Dried parsley
  7. Fresh cilantro or parsley
  8. Crushed red pepper if you like a little spice but omit if you can’t handle spicy
  9. Jovial Foods gluten-free capellini pasta or any type of pasta you have
  10. Juice of a lemon
  11. Olive oil
  12. Parmesan cheese

How to prepare:

This dish comes together in no time and that is what I love about it. I first added my garlic ghee to a pan and warmed. And in another pot I started to bring about 4 quarts of water to a boil with salt for my pasta. Once the ghee was warm, I added my drained clams with pepper, oregano, parsley, and sautéed for a few minutes. Next, I added the calm juice, fresh cilantro, and crushed pepper and cooked for the duration it took my pasta to cook (8 minutes).

Plating the linguini and clams:

Once the pasta is done cooking, I drained the pasta, added to a bowl, and topped with the clam mixture, olive oil, parmesan cheese, juice of a lemon, and fresh cilantro. And don’t forget the bread, I toasted some of my grain-free bread from Awgbakery to enjoy with this dish.

Gluten-Free Linguine and Clams

Ingredients

  • 3 6.5 ounce drained wild caught clams with salt
  • 1/4 cup ghee substitute any oil you use
  • 6 garlic cloves minced
  • Salt and pepper to taste
  • 1 cup clam juice
  • 1 tsp dried oregano
  • 1 tsp dried parsley
  • 1/3 cup chopped fresh cilantro or parsley
  • 1/2 tsp crushed red pepper
  • 1 12 oz package jovial foods gluten free capellini pasta or their grain free cassava spaghetti pasta Substitute whatever type of pasta you prefer
  • 1/3 cup parmesan cheese Optional

Toppings:

  • 1 large lemon juiced
  • 1-2 Tbsp olive oil
  • 1-2 Tbsp grated Parmesan cheese
  • 1-2 Tbsp fresh cilantro
  • 1/4 tsp chili flakes

Instructions

Clam mixture

  • Add ghee to pan to warm
  • Add diced onions with salt and pepper to taste and saute for 5 minutes
  • Add minced garlic, seasonings, and cook until fragrant (1-2 minutes)
  • Add drained clams, clam juice, cilantro, and cook until most of the liquid is absorbed
  • Optional: add in some parmesean cheese and mix

Pasta

  • Bring salted water to a boil
  • Add pasta and cook according to package
  • Once done cooking, drain pasta, add the pasta noodles to the pan with the clams, and mix
  • Squeeze lemon juice over pasta, drizzle olive oil all over, sprinkle some parmesan cheese, top with more fresh cilantro, and enjoy!
