Apple Pie Oatmeal Cookies:

Apple pie oatmeal cookies is a fall dessert you all will need in your life STAT. We went apple picking a couple weekends ago and have a lot of apples to use up. So I thought I would remix my favorite oatmeal raisin cookies into an apple pie oatmeal version.  These cookies are gluten-free, dairy-free, refined sugar-free, and super easy to prepare. You can enjoy these cookies for an on-the-go snack or for a healthy dessert option.

Ingredients you will need:

  1. Sprouted Gluten-Free quick oats
  2. Diced apples
  3. Almond flour
  4. Vanilla Extract
  5. Coconut oil
  6. Organic pasture raised egg
  7. Cinnamon
  8. Apple pie seasoning
  9. Baking powder
  10. Coconut sugar (sub any sugar you prefer)
  11. Optional: raisins

Can I substitute ingredients?

For this recipe I have not tried substituting any of the ingredients, because this is my preferred ingredient list. But you all can use whatever you have on hand as far as the oats, sugar, and seasonings go.

How to prepare the cookies:

Preparing these gluten free apple pie cookies are easy peasy. Because you will only need one bowl, can add all the ingredients to the bowl at once, and mix. Then let you dough chill in the refrigerator for 30 minutes. And once the dough is done chilling, use an ice cream scoop, scoop out the batter, roll into balls, and flatten with your hands. Then add to a lined baking sheet and bake 350 F for 10-13 minutes.

How to store cookies:

I add my cookies to an airtight container and store in the refrigerator. These cookies also freeze well, so if you don’t plan on eating them all then store in the freezer in an airtight container.
