There is no limit to the love I have for dates and raw cookies dough. So while I was sitting at my desk working on reports for work, I decided to take a break and get my butt in the kitchen to try creating something with my two loves. Man was this the best decision I could have made, because these stuffed cookie dough dates are a game changer for sure.
The nice thing about these dates too, is they take less than 5 minutes to whip up, require no baking, and you probably already have all the ingredients in your pantry.
First step includes preparing your cookie dough filling:
You will need the following:
- Tahini (substitute any nut/seed butter you would like, my second favorite is using Cashew butter)
- Maple syrup
- Almond flour
- Maple syrup
- Cinnamon
- Mini chocolate chips
Mix all ingredients in a bowl and set aside while you prepare your dates for stuffing.
I love using Medjool dates because they are so thick and delicious. You want to make sure that you remove the pits and make a slit down the middle of the dates.
Then add a tablespoon of the cookie dough filling to each date and DEVOUR. Get ready to want to eat three in one sitting, they are that good. To take it up a notch you could also dip in melted chocolate and sprinkle some celtic sea salt on top. I like to store mine in the freezer but you can also store in the refrigerator.

Cookie dough stuffed dates
Ingredients
- 10 medjool dates pits removed
- 1/4 cup tahini
- 1-2 tbsp mini chocolate chips
- 2 Tbsp almond flour
- 2 Tbsp maple syrup
- 1 1/2 tsp cinnamon
- Optional for dipping: Melt 1/2 a bar of Hu kitchen simple dark chocolate bar with 1 tsp coconut oil

- Make a slit down the middle of your date and remove pits
- Prepare stuffing by adding tahini, maple syrup, cinnamon, chocolate chips, and almond flour in a bowl and mix
- Stuff your dates and squish date together to close up a bit
- Optional dip in melted chocolate
- Store in freezer
