Chicken and Broccoli Alfredo Casserole:

This chicken and broccoli Alfredo casserole needs to be added to your weeknight meal rotation. And casseroles are a great meal prep option for the week. Because you can prep ahead of time, they are super easy to prep, and the possibilities are endless.

Ingredients you will need:

  1. Instant pot shredded chicken or rotisserie chicken
  2. Broccoli
  3. Alfredo Sauce ( I used Primal Kitchen Foods)
  4. Salt + pepper
  5. Shredded cheese (optional)

  7. Chicken Bone Broth
  8. Onions
  9. Ghee or oil
  10. Fresh cilantro

Preparing the shredded Instant pot chicken:

I like to make my shredded chicken in my Instant pot because it is super easy to prep, and leaves the chicken super tasty. But if you want to save time, get a rotisserie chicken and shred. First, set Instant pot to sauté function, add oil, and warm oil for 30 seconds. Add in the diced onions with salt + pepper and sauté for 5 minutes or until caramelized. And then add in chicken breast and brown a couple minutes each side. Add chicken bone broth, turn off sauté function, close Instant pot, seal valve, and set to manual high pressure for 10 minutes.

And once it is done cooking, let the pressure release naturally. Next, shred the cooked chicken with 2 forks. And since there will be excess liquid leftover, set Instant pot to sauté function, and let the shredded chicken simmer in the juice for 3-5 minutes.

Putting together the casserole:

And once the chicken is done cooking, it is time to prep the casserole. Add the cauliflower rice, shredded chicken with some of the leftover bone broth, chopped broccoli, chopped cooked bacon, and Alfredo sauce to a 11 x 6 casserole dish, and mix. If using the cheese, add half the mixture, mix, and top the casserole with the rest of the cheese. And bake the casserole 350 F for 35-40 minutes. Once done top with fresh cilantro. But if cilantro isn’t your jam, use fresh basil or parsley.

Meal prepping ahead of time:

This meal is the perfect prep ahead meal. I like to prepare it all, add to casserole dish, and bake the night I plan on enjoying. But you can bake it and store in the refrigerator too, either way works!

  • 1 1/2 cups shredded chicken I used my homemade Instant pot chicken but rotisserie chicken will work too
  • 1 cup chopped broccoli
  • Salt and pepper to taste
  • 1 cup shredded cheese optional
  • 1 12 oz bag frozen cauliflower rice
  • 1/2 jar Primal Kitchen Foods No Dairy Garlic Alfredo Sauce
  • 6 sliced chopped cooked bacon
  • 1/3 cup onions only add if you don’t make my instant pot chicken

Instructions

Instructions:

  • Prepare your Instant pot shredded chicken or shred rotisserie chicken
  • Add frozen cauliflower rice to 11 x 6 casserole dish
  • Add shredded chicken, chopped bacon, broccoli, Alfredo sauce, and onions (if not using my shredded chicken recipe)
  • Mix it all up
  • If using in cheese sprinkle half into the mixture and mix it all up
  • Top with the rest of the cheese and bake 350 F for 35-40 minutes
  • Broil for a couple minutes (keeping an eye on it so cheese doesn’t burn)

Instant Pot Shredded Chicken:

Ingredients

  • 1 Tbsp oil
  • 1/3 cup diced onions
  • Salt and pepper to taste
  • 3 chicken breast
  • 1 1/2 cups chicken bone broth
  • 4 garlic cloved minced

  • Set Instant pot to sauté function, add oil, and warm for 30 seconds
  • Add in diced onions, salt and pepper, and sauté for 5 minutes or until caramelized, stirring throughout
  • Add minced garlic and cook for 30 seconds or until fragrant (you don't want it to burn)
  • Add in chicken breast and brown a couple minutes each side
  • Add in chicken bone broth
  • Turn off sauté function, close Instant pot, seal valve, and set to manual high pressure for 10 minutes
  • Once done cooking let pressure release naturally (10-12 minutes)
  • Shred chicken with 2 forks
  • If a lot of liquid leftover, I like to set to saute function, and let my shredded chicken simmer in the juices for 5 minutes
