If you love carrot cake, you are going to fall in love with these easy carrot cake chia and hemp seed pudding parfaits. I like to meal prep mine on Sunday’s for an easy grab and go breakfast. You could also prep them the night before if meal prepping isn’t your jam. If you haven’t tried combining chia and hemp seed for your puddings, you must try. It leaves the pudding extra thick and loaded with plant based protein. When it comes to prepping my chia + hemp seed puddings my tip is to blend it all in a blender. Not only is it a time saver, but it elevates the taste and consistency of the pudding.

What you will need for these parfaits:

  1. Chia seeds
  2. Hemp seeds
  3. Coconut milk
  4. Vanilla extract
  5. Maple syrup
  6. Cinnamon
  7. Nutmeg
  8. Ginger
  9. Cardamom

For toppings you could add:

  1. Raisins
  2. Carrots
  3. Candied pecans
  4. Pecan butter

I like using these Weck jars for my parfaits, not only are they adorable, but they are super convenient for on-the-go. You are going to pack your parfaits in the mason jars, store in the refrigerator, and in the morning grab and go.

Carrot Cake Chia + Hemp Seed Pudding

Makes 4 servings

Ingredients

  • 1 cup coconut milk
  • 1/3 cup chia seeds
  • 1/3 cup hemp seeds
  • 1 tsp vanilla extract
  • 1 tbsp maple syrup
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/4 tsp ginger
  • 1/4 tsp cardamom

Toppings:

  • 1/3 cup shredded carrots
  • 2 tbsp Raisins
  • 2 tbsp pecan butter

Optional: my candied pecans

Instructions

  • Add everything except carrots, raisins, and pecan butter to a blender and blend
  • Add some chia + hemp seed pudding to mason jars, layer some carrots, raisins,pecan butter, and repeat until you get to top of mason jar
  • Optional top with some of my homemade candied pecans
