Apple Pie Chia + Hemp Seed Pudding Parfaits

My mornings are super busy between trying to squeeze in a 30 minute workout, doing some work before work, and having some me time before tackling the day at work. I prioritize my time to be able to get everything that needs to get done accomplished. Therefore it helps me a lot when I meal prep my breakfast’s during my meal prep Sunday series. One of my favorite items to meal  prep are these chia seed pudding parfaits. The flavor combos are endless and fully customizable to your dietary preference.  This apple pie chia seed pudding is one of my favorite flavor combos especially with the sautéed apple mixture.

Why I like to add hemp seeds to pudding:

When I make my chia puddings I also love to add hemp seeds. I really think they are a match made in heaven and upgrade your chia pudding. Not only is it adding more protein to the puddings but it creates such a thicker pudding which keeps me satiated for longer periods. Another trick of mine when it comes to getting a creamy chia pudding consistency is adding all ingredients to the blender and blending up on low. This really is a game changer and suggest you try it out the next time you make your chia pudding.

Here is what you will need for the chia + hemp seed pudding:

  1. Coconut milk
  2. Chia seeds
  3. Hemp seeds
  4. Vanilla extract
  5. Date syrup (sub maple syrup)
  6. Primal Palate Apple pie seasoning
  7. Cinnamon

How to make the chia pudding:

Simple add all the ingredients to a blender and blend to get a nice smooth and thick consistency and set aside while you prepare your sauteed apples.

For the sauteed apple’s here is what you will need:

  1. Diced apples
  2. Pumpkin seeds
  3. Chia seeds
  4. Date syrup
  5. Apple pie seasoning
  6. Cinnamon
  7. Filtered water

Add everything to a pan and cook 5-7 minutes stirring throughout.

Layering fun:

Let the apple mixture cool completely before you start to layer your chia + hemp seed parfaits. I like to add a layer of the chia pudding first, then the apple mixture, and repeat until you reach the top if the jar. Store in the refrigerator and grab and go in the morning.


I like to store mine in ready to go jars, for an easy grab and go breakfast. The jars that I like to use are the weck jars and you can purchase here.

 

Apple pie chia + hemp seed pudding parfaits

Makes 4

Ingredients

Chia pudding

  • 1 cup chia seeds
  • 1 13.5 oz can full fat coconut milk
  • 1/3 cup hemp seeds
  • 2 tsp vanilla extract
  • 1-2 Tbsp date syrup sub maple syrup or honey
  • 1 tsp apple pie seasoning
  • 1 tsp cinnamon

Sauteed Apples

  • 1 tsp vanilla Madagascar ghee sub coconut oil
  • 2 opal apples diced sub any apples you prefer
  • 1/4 cup pumpkin seeds
  • 1/4 cup chia seeds
  • 1 tbsp date syrup sub maple syrup or honey
  • 1 tsp apple pie seasoning
  • 1/2 tsp cinnamon
  • 2 tbsp filtered water

Instructions

  • Add all ingredients for chia pudding to a blender, blend on low, and set aside.
  • Add ghee to a pan and heat ghee
  • Add diced apples, date syrup, and seasonings, sauté for a few minutes
  • Add in pumpkin seeds, chia seeds, and 2 tbsp of water and mix
  • Layer your chia pudding and apple mixture
  • Store in fridge
